I've been making hard and soft cheeses for several years. Regardless how many times I make the soft cheeses presented in this book, I'm amazed at how a process so simple can yield something so delicious.
About the Author
Tammie Painter has been making cheeses ranging from ricotta to Romano, paneer to Parmesan for several years. Her interest in cheese making began with a desire to make homemade beer. Realizing that she'd have several gallons of bad beer to drink if a batch went bad, she decided home brewing wasn't for her. Within the same catalog for beer making supplies were cheesemaking kits. The order was placed and after the first batch of warm and chewy mozzarella, she was hooked.
Tammie writes from Portland, Oregon, where she also paints, gardens, keeps bees, wobbles on her stand-up paddleboard, reads book after book, and dreams of her next vacation - not all at the same time, of course.

So far, I've tried only a few recipes, and then fed them to my friends.
Nobody has dropped dead yet! and some request "more," so I guess I'd recommend this to any cook looking for a new direction to branch out it!
And DON'T be afraid to try making cheese. Seriously? Cookies are harder for me.
Pictures of finished cheeses would have been nice.
The yogurt cheese recipe is very tasty, love it with garlic and herbs added--plus it was a easy recipe to start my adventure of making simple cheese.
I would definitely recommend this book--this book certainly simplifies making soft cheese...
