Coriander Millet Porridge with Rosemary Concord Grape Compote
This breakfast warms to the core, with stunning color and a balance of savory and sweet flavors. Millet, with its fine texture and pleasantly mild flavor, makes for a hearty, creamy porridge.
This bowl is a tribute to spring—from the crisp and tender asparagus and peas, to the pink baby radishes and young greens. Buckwheat offers a light but nourishing base, while the green tahini sauce provides a welcome creaminess.
Beet and Zucchini Veggie Burgers
A stunning, light veggie burger option for the summer, these are fluffy from zucchini, with substance from beet, lentils, and chia. No bread crumbs, eggs, or cheese are required.
Spring Vegetable Black Rice Pilaf
This quick and easy dish showcases vibrant spring greens against the dramatic, dark purple grains of forbidden black rice.
Early Fall Soba Noodles with Broiled Figs, Kabocha Squash, and Kale
This quick soba noodle dish celebrates the abundance of figs, squash, and kale in early fall, finished off with a piney kiss of sage and a sprinkling of pistachios.
Mango Cashew Cream Pudding with Vanilla and Lime
To celebrate mango season, make this smooth, vanilla-scented cashew cream, with swirls and layers of juicy mango, lime and chia purée. It can even be eaten as an indulgent breakfast.
“Simply Vibrant is intuitively organized and brilliantly executed. It illustrates how many of us are striving to eat these days: crave-able, template-style recipes with seasonal touches, simple techniques, and an underlying nourishing essence that reads as encouraging, rather than prescriptive. Anya’s approach starts with a deep-rooted reverence for what nature provides in all of its seasons—and in all of its sometimes neglected or wasted forms. The thoughtful uses for carrot tops, chickpea soaking liquid, and barley cooking water—like the rest of the book’s delicious plant-based recipes—speak to both virtue and pure enjoyment. This book inspires me to cook (and live!) with a deeper sense of care and appreciation.”
—Laura Wright, author of The First Mess Cookbook
“Anya’s approach to food and the seasons always stands out as creative, inventive, and colorful. Simply Vibrant contains an abundance of inspiring recipes and clever tricks to add more nourishment and adventure to your everyday meals.”
—Amy Chaplin, James Beard award-winning author of At Home in the Whole Food Kitchen
“Anya has the incredible ability to inspire her readers to cook, but more importantly, she helps them tap into their own intuition to create delicious meals in a more relaxed way. I love her emphasis on seasonality, and her creative approach to leaf-to-root cooking, using every ingredient to its fullest potential without wasting a single seed! This recipe collection is bursting with global flavors, unique ingredient combinations, and of course, vibrancy on the highest level.”
—Sarah Britton, holistic nutritionist and author of My New Roots and Naturally Nourished
“We are longtime fans of Golubka Kitchen and Anya’s creative and beautiful plant-based recipes. Her new book is jam-packed with healthy, flavorful, and simple recipes and lots of interesting suggestions on how to cook with the odds and ends of produce that usually are discarded—like making marmalade from watermelon rinds and risotto using broccoli stems. So clever!”
—David Frenkiel and Luise Vindahl, creators of the blog Green Kitchen Stories
“No more dreary plates of dingy, overcooked vegetables. Kassoff has banished dullness from the vegetarian diet. She offers a wealth of recipes, all of which promise to stimulate both taste buds and retinas.” —Booklist
"What made me want to cook from Simply Vibrant is its more relaxed approach to plant-based cooking" —Toronto Star
"Simply Vibrant captures the kind of accidentally-vegetarian food we want to eat right now." —Bon Appetit

It is full of different options for breakfast, lunch, dinner, and desert. Most have very limited ingredients(though not limited in taste) which is amazing for someone who loves to keep as few things as possible.
The recipes are so unique, I’ve tried at least three kinds of grains I never even knew existed because of this book. They taste amazing, aren’t too hard to put together-especially not since she’s lays out perfectly what order to do things in and what can sit and cook while you prep other things-, and are so healthy!
Have cooked a meal from it every night since I got it, looking forward to the next one!
Simply Vibrant is also extremely engaging with it's readers, thank you Anya/Masha for welcoming us into your beautiful home and bringing such color to our diets. Your combined passion for a healthy diet and lifestyle continues through this book. I have shared your recipes with many friends and family and I can truly say, you really make ME look good at dinner parties!
This is an absolute must for anyone looking to incorporate some serious flavor into their diets!
