Native to South America, the pineapple also known as Ananas is thought to have spread from what is today Paraguay throughout South America and the Caribbean. It was first seen by Europeans by the Columbus expedition of 1493, found on the Caribbean island of Guadeloupe. Because this fruit requires a tropical climate to flourish and is very perishable, attempts at cultivation in Europe were limited to hothouses. The Pineapple became a status symbol and an expensive treat. Cultivation spread into African, Asian and South Pacific colonies of Spain and Portugal, but lack of refrigeration meant the fruit did not travel well and was still in high demand. The fruit reached Hawaii in the 18th century and as mechanization and refrigeration arrived on the scene, the Pineapple was finally brought home to the masses. Pineapple is high in Bromelain, a proteolytic enzyme which breaks down proteins. This makes pineapple an aid in proper digestion. Bromelain is also an anti-inflammatory. Pineapple is also high in content of Manganese and Vitamin B1 which aids in antioxidant defenses and in producing energy. Low in calories, sodium, saturated fat and cholesterol, pineapple is a good source of fiber while its rich content of Vitamin A and Beta-Carotene aids in protection from free radicals and in boosting the immune system.
Excellent snack for hiking, may be eaten directly, or added to salads and fish dishes. Works well as an addition to salsa preparations, or in yogurt parfait. Can be pureed and combined with milk for a healthy milk shake. Shelf life: twelve months from production date. Storage: place in cool and dry place, do not refrigerate.
