Sitram

Sitram logo Made in France

Sitram France has produced professional grade cookware for over 40 years. It is favored by many of the world's top executive chefs and restaurants. We're glad to have Sitram available in the U.S.

Chef Saucepans

Why do so many professionals around the world favor Sitram cookware? Sitram cookware is made in France, designed for commercial use. The factory is fully aware of the highest expectations that executive chefs place in their equipment, and continuously works with them to provide nothing but the best. Why would you want professional cookware? Oh, where do we start! How about "these pots and pans are virtually indestructible as well as dishwasher safe"?

There's more:

To pour drip-free, simply push the lever. Releasing the lever re-seals it. For easy filling and cleaning, the attached lid opens all the way.

Both lines offered here, Catering and Profiserie, are made of highest quality 18/10 stainless steel to guarantee even heat distribution. Since the base is composed of three thick layers of sturdy metal, they will never warp, yet Sitram cookware heats up quickly and retains heat extremely well.

Needless to say, Sitram's surgical-steel grade material won't discolor or alter the flavor of foods. Users around the world praise how smooth the interior remains even after years of rigid use.

The handles are multiple spot welded to provide superior durability and easy cleaning. The lids feature a small hole to vent: While it keeps liquids and flavors in, it lets just a tiny amount of steam out so that the lid doesn't vibrate top of a boiling pot. All pots, pans and lids are dishwasher safe, NSF* certified and come with a limited lifetime warranty.

Catering versus Profiserie
Catering
Catering set

Catering boasts a thick copper core sandwiched between two layers of 18/10 stainless steel. Copper allows for a higher cooking temperature, perfectly even heat distribution, and a quick response time to temperature changes.

The grooved handles are the hallmark of commercial-grade cookware.Catering withstands temperatures up to 1800F and can be used on gas, electric, or ceramic stove-tops. Oven-safe (please use oven mitts).

Profiserie
profiserie set

Profiserie has an extra thick aluminum disk sandwiched between 18/10 stainless steel and comes with comfort grip stay-cool tubular handles.

Profiserie can be used on gas, electric, ceramic, or induction stove-tops. Oven-safe (please use oven mitts).

For your convenience, all Sitram pieces are available "open stock". Sitram does not force you into buying cookware sets to include items/sizes you don't need. Get exactly what you need - not more, not less, and enjoy it for a lifetime. Let Sitram become your trusted partner in your kitchen. Bon Appétit!

Due to its excellent composition of 18/10 stainless steel and a high-density alloy base, this top-quality, medium-size professional French chef's pan is favored by many commercial kitchens that use induction heat for cooking. When the induction cooktop is turned on, its coils produce a high-frequency alternating magnetic field that causes the molecules in the pan's base to vibrate. As a result, the pan and the food heat up super-fast.

Stainless steel serves as a nonreactive cooking surface, and the stainless-steel handle stays cool longer. This versatile pan is not restricted to induction cooktops--it may be used on more traditional heat sources as well, and is ideal for soups, pasta, and sauces. Welcome to your new favorite pan. --Marcela Broussard

This pan works as advertised. The advantages over a similar diameter saute pan are 1)the ease of getting a spatula around the curved bottom when stirring reductions or sauces, and 2)it reduces quicker than a sauce pan or saute pan since the disc bottom is smaller than the top diameter, and a good rolling boil is established for maximum rate of evaporation.

It has a tubular handle that stays cool when used on my electric coil stove elements. I haven't needed to use a pot holder so far. It has no hot spots. It cleans up easily with Barkeepers Friend or in the dishwasher. If you heat it on high while it's empty it it will get some dark spots, (you can scrub them out with Barkeeper's friend) but it hasn't warped.

America's Test Kitchens downrated it in comparison to the (almost 3 times as expensive) All-Clad because the Sitram disc bottom allowed some food to burn at the disc edge where it transitions into the plain stainless steel 'bowl'. I believe their observation, but it has never happened to me when using the pan. I usually reduce the heat to medium-high once I have got the pan hot.

For that reason the sitram gets a 4 star rating. If I were willing to spend $140-150 instead of $50, I might indeed go for the All-Clad or Demeyere 'straight gauge' stainless-aluminum-stainless laminated sauciers, but so far there has been no functional reason to do so.

UPDATE: Jan 2016 -- after about 10 years of daily use, this pan and all my Sitram Profiserie pans are as good as when I bought them. No failures of any kind, no warping after years of current radiant top electric range (ugh!

I have owned Sitram for many years now. It has always performed without any fuss. I did not have the saucier before. I use it every day for breakfast. Easy to clean and the food (oatmeal) does not stick.

This pan has a earned permanent burner placement on the stove. Pouring is a dripless affair, and the thick bottom eliminates hotspots. The long handle stays cool and it's spot-welded to the body, so there are no rivets to scrub around. Get the lid, and you have a perfect simmering pan for low heat braising, too.

This is a very useful all purpose pan. It is well made in France and the curved sides make it very easy to stir sauces. The price was quite reasonable for a pan of this quality.
