Wowzers! I had read in the previous reviews about customers who were absolutely amazed at the scent upon opening the bag...they were not wrong! A gorgeously delicious, full bodied, earthy aroma greeted my nose as I opened the bag. These are definitely the best flavored peppercorns I've found, and I've been grinding my own pepper for years. And the value? You can't beat it...top restaurant quality for an amazing price. This will definitely be my 'go to' peppercorn product from here on out. Oh, yes...the bag...I'm not sure what the designer had in mine but that is a seriously weird graphic (I've been in advertising design for years) that they chose to be on the front of the bag...even a little creepy, maybe? See if you agree. But OH, WELL!!! That will NOT keep me from buying these peppercorns over and over!

Numbs, No Seeds, Few Stems

This was my first time making kung pao chicken and wanted to make an authentic as possible, though gluten free, version. From my research, I knew I didn't want any seeds or stems. There were a little bit of the shells that had a very short stem sticking out of them, but not a lot.

I used 1 tablespoon that I ground in a coffee grinder and finished off using a pestle and motor to the oil that I warmed. Then, I discarded the peppercorns. The other 1 tablespoon I added whole towards the end of cooking along with the greens of scallions. They all melted into the kung pao without being crunchy. Prior to adding the whole peppercorns, I tasted the dish and it was slightly spicy. Once I addedd them, it was hardly spicy at all. I ended up adding a little red chili oil for some heat. So, the peppercorns obviously were doing their job well.

I couldn't have been happier. The dish was spectacular! I will be adding it to my regular rotation of dinner meals.

Note that after completing our meal, water tasted like it had baking soda or Alka Seltzer in it. The wine tasted off as well. The only thing I could drink that tasted good had to be sweet.

These are very fresh. That also means they are very potent. I had never had them before and made a chicken dish (with fake chicken). I followed the recipe. Apparently, they assumed that you had older peppercorns, not these little balls of hell. My poor mouth was super numb with every bite in a very unpleasant and unsettling way. They still get 5 stars, because apparently, that is what they are supposed to taste like. In summation: if you like Szechuan peppercorns, you will like these. If you've never had them, make something that just uses a little bit, and prepare yourself mentally and physically for the unpleasant sensations.

These definitely seem like a step-up from the non-premium Szechuan peppercorns I have used in the past. Very fragrant! A word of warning: I have a rather high tolerance for Szechuan peppercorns, but when I was too generous with this premium stuff it definitely wasn't pleasant. Give these peppercorns, and their numbing power, the appropriate respect.

The Soeos Premium Szechuan peppercorns are the best Szechuan peppercorns I have ever purchased.

Over time I have tried at least 6 different brands of Szechuan peppercorns. Most need to be hand sorted to remove seeds and stems. One from Amazon actually had far more rejected seeds and stems than usable husks.

I ordered the Soeos Premium from Amazon expecting more of the same but hoping for a small improvement. I was (and still am) amazed by the high quality of the premium and will be buying more in the future.

Amazing stuff. Not much experience with buying authentic szechuan peppercorns before, but this is definitely a unique flavor. Adds a great deal of lemon, in addition to the unique numbing/spicy sensation. Currently working on a chili featuring this stuff, but so far the lemon profile has been a turn-off for the wife.

*Note: If it's your first time cooking with this, use small amounts. It's very potent; over-killed about a 5 qt pot of chili with a tablespoon of it. I would suggest actually sauteeing it in butter, then straining out the peppercorns. Use the butter for seasoning/cooking and you'll get the flavor without the grit and pungent kick of the peppercorns (just try biting into one of these).

This is our first time buying "fancy" (Aka not preground or portioned in the disposable grinders). I opened the bag and was hit with such an intense smell of spicy goodness I was shocked. Have you ever gone to a truly fancy Italian place where they crack pepper over your freshly made sauce? It smelled like that and taste like it too! I am using a 3rd of the pepper I had previously! Yay Pepper!
