And once you have some good stocks- there are so many options! All of them have variations, too, to help one tweak the recipes to one's taste, or what one has available.
There's even advice on freezing for each recipe- yes, no, or it depends.
Now, I do NOT favor the way the author suggests using a bouillon cube instead of homemade stock, or commercial broths- or even some of the broth concentrates which have a lot less salt than the cubes. Still, it's easy to ignore that advice!
I look forward to trying many of the recipes (although the Hot and Sour soup one is lacking!).

There are soups for all seasons, for family meals and for more formal dinner parties. Vegetarians and vegans will find many of the recipes are ideal for them. Patten also gives lots of ideas for garnishing the soups.
Unlike many of the 'celebrity chef' type cookery books which are so popular these days, there are no carefully 'styled' glossy shots of the soups, - no lifestyle commentary, just a wealth of practical information from someone who really knows her subject and how to convey it.



is really only the veg section for me, wish they covered more rather than stuff it full of things no one would ever cook.

We grow out own vegetables so it is a good way of using up surplus veg.
