I had read about palm oil and wanted to try it; when I searched online, I realized I'd been walking past palm oil in the supermarket for years -- in the Spectrum Organic Shortening tub.
I mostly use this shortening in cookies, as a substitute for butter. I spoon it out and pack it down into regular measuring cups and substitute using a 1:1 ratio. (For example, if 1 stick of butter is called for, I use 1/2 cup of shortening instead.) It also melts pretty quickly in the microwave. It's colorless to light yellow when melted so will not greatly contribute to the color of your baked goods. It doesn't have much in the way of flavor. I've also used it in pie crusts with success.
The most recent tub I purchased is sitting in my pantry. It's technically past the expiration date, and has been for some time, but is still good. No off smell or discoloration of any kind, even though the package has been open for awhile. So if you're worried about using all of it, don't be -- it lasts a long time.
Note: I am not claiming shortening is healthy and/or good for you. I use it in baked goods, depending on the texture I want (or sometimes just for variety). It is still a fat and needs to be used in moderation. But, if you're vegan or want an alternative to hydrogenated shortening or just like to experiment in the kitchen, this is a nice alternative and definitely worth a try.
Edit 10/31/13: Spectrum Organic indicates on their website that their palm oil sources are sustainable (and thus your use of this product would not contribute to deforestation).
