- 1/2 tsp fresh ground pepper
- Sea salt to taste, 400 g canned tomatoes
- 6 cups / 1.5 litres vegetable stock
- 1 cup spinach, 1 tsp coconut or olive oil

How to Prepare Red Lentil Soup
Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes | 6 Servings
Best Vegan Red Lentil Soup with carrots, tomato, and spinach. The perfect comfort soup for a cold winter. It takes about half an hour from start to finish and freezes well.
INSTRUCTIONS:
- In a large pot, heat the oil over medium. Add the onion and garlic and sauté for a couple of minutes or until soft and fragrant;
- Stir in the carrots, celery and cook for another minute or two. Add spices, stirring to coat the vegetables;
- Add tomatoes and pour the vegetable stock in;
- Increase the heat to high and bring the soup to a rolling boil. Add the lentils and reduce the heat to medium-low and simmer for 20-25 minutes, or until the carrots are tender;
- Turn off the heat and stir in the spinach.

I love lentils (green or red) and this brand is one of my favorite. I have reordered multiple times - the quality of the product has been always consistent, lentils are clean and taste good. Availability of different bulk sizes is a plus. Packaging is solid, no ripping even when I order big bags and they get thrown over the gate during delivery.
Update Feb 2021: reordered 10 lbs bag of red lentils, something is wrong with the lentils this time and i cannot return. There were thick clouds of dust in the air (a lot!!) when I try to pour the lentils into my plastic storage containers - never happened before.

I checked the images and description carefully, and it did not mention wheat anywhere. The actual bag that came said processed in a facility that also processes tree nuts and wheat.
For a family with food allergies, that means we cannot eat this, as it may trigger a reaction.
