Stack Happy is one of those cookbooks that you want to take one recipe a week from until you have made them all. Pretty much everything is covered in this cookbook pancakes for breakfast, pancakes for dinner, pancakes for dessert this book will seriously leave you dreaming of pancakes!! One thing that I was really excited about even though I haven t tried any yet is that there is a section devoted to savory pancakes. As much as I love sweet pancakes, I cannot wait to try some of the savory options. Like the BLT Potato Pancakes. YUM!! Plus there are healthier pancake options, as well and they all sound divine! Karly also gives you tips and tricks for making the perfect pancakes. She is a fluffy pancake girl as am I and she gives some hints on making fluffy, perfect pancakes. There are also plenty of recipes for pancake toppers, from Salted Caramel Syrup to Cinnamon Honey Butter. Breakfast will never be the same!! I love that there is a photo of every recipe - a big, beautiful photo. And none of the ingredients are weird or things that you can't find at a regular grocery store. I made the Cheesecake Pancakes and my kids and I enjoyed them for dessert one day. Totally delicious and decadent!! --Amazon
This cookbook is down right amazing! Just made the Cinnamon Sugar Donut pancakes for my grandchildren. They were absolutely delicious! I was a little, leary about the thickness of the batter with my first batch (she warns you of this in the beginning of the book). My pancake batter had never been thick, of course it was out of a box. Resist the urge to add liquid. I promise, you won't regret it. Oh wow, they were fluffy and perfect. Never again will I eat pancakes from a box. I know what I have been missing all these years with box pancakes, plus they're easy to make. I totally recommend this book. I hope this review helps. This book is flipping AMAZING! After trying Karly Campbell's delicious recipes, I now agree with her when she tells you that pancakes are one of life's greatest pleasures! Cinnamon roll pancakes for breakfast are my kids everyday request. Move over Aunt Jemima - these pancakes are not only awesome, the way Karly writes her recipes keep the pages turning. I used more nutritious flours, loaded them up with protein where I could, and snuck in as many vitamins as possible,” Karly Campbell writes her cookbook, Stack Happy: 70 Flipping Delicious Flapjack Recipes for Breakfast, Dinner, and Dessert.
At one hundred and eighty pages, this hardbound targets those interested in food recipes involving pancakes or flapjacks. With full-page, full-color photographs that cover each of the complete meals plus sometimes both opened pages, there are seventy recipes.
After a short introduction that includes a page of tips and techniques, six chapters cover the topic of stacks, ending with an index, author’s biography, and acknowledgments. The table of contents does not list all recipes so one has to search each section or look in the index.
Beginning the first chapter with pancakes that include fruits, the next covers breakfasts followed by healthier options. The section on savory pancakes offers dinner recipes while the next is on desserts. Sauces and syrups compete the main part of the book.
After its title, each recipe has a short description or author’s note. An area giving the preparation and cook time along with serving size is on the right side of the page with a list of ingredients in used order under it. Instructions in paragraph format are on the opposite side of the page. No nutritional or caloric information is given.
Some of the mouth-watering concoctions of pancakes include blueberry granola crunch, carmel apple, chocolate strawberry skewers, maple-glazed bacon, hoecakes, cinnamon roll, whole wheat butternut squash, pumpkin quinoa, garlic parmesan zucchini, ham and cheddar rice, loaded potato, cookies and cream, pecan pie, and pineapple upside-down cake. Sauces and syrups range from strawberry rhubarb and salted carmel to cinnamon honey and raspberry fruit butters to name a few.
Although the recipes lack caloric data (which may be a good thing for those with a sweet tooth), the book would make a wonderful gift for the pancake lover or one looking for additional recipes involving flapjacks.
Author Campbell is a homeschooling mother who married her high school sweetheart. As a dedicated blogger, she has been featured for her homemade food on popular websites.

The steps and presentation of the recipes are simple. And I am a horrible pancake maker, honestly, but mine have come out perfect. My kids have bookmarked lots of recipes to try. Great book!!
