EASY PREPARATIONTo melt our cacao pastes, first fill a small saucepan with water, then let it boil. When the saucepan starts to boil, turn off the fire. Dissolve the chopped cacao pastes in the boiling water. Wait for the cacao to melt, then stir it for 3 to 5 minutes until it is completely melted. For an added touch of flavor, add cinnamon and cloves to the saucepan while you are boiling the water. You can also add milk and sugar to the cacao paste while stirring it. |

A cacao purists dream!

I must have Aztec in me somewhere, I’m a purist when it comes to cacao, I have alway loved unsweetened cacao, it just tastes really good to me. When I was little my mother would cringe when I would eat her unsweetened bakers chocolate. I drink unsweetened hot cacao every morning, I usually use powdered cocoa and boiled water from my automatic water kettle for convenience but this Star Andino brand is particularly delicious and well worth the little extra effort! It’s very full flavored and I don’t find it particularly bitter. This comes in solid lumps, you can weigh as needed and use this as you would unsweetened bakers cacao in candies or baked goods, or just eat it like I do! It chops up easily with a knife. Cacao is packed with antioxidants and so is Canella, that’s the drink of the Aztecs. I make a hot drink using both that’s quite delicious, once you get past your need for the sugar. I actually hate sweetened hot cocoa now! I’ve added my recipe in the photos. It’s simple, a cup of water, a tablespoon of chopped cacao and a pinch of Canella or more if you like. Bring it to a boil in a small pot, whisk till melted and pour into a cup. I add a splash of milk for two reasons. One, it makes it richer but more importantly, a lot of cacao can give you kidney stones because of the calcium content but if you consume it with a little milk, the calcium binds with the proteins in the milk and prevents you from getting kidney stones. So now you know! Once you really taste unsweetened cacao and learn to appreciate all of its subtle and not so subtle nuances, you won’t miss the sugar but if you do, you can always add some, I won’t hold it against you!. : )By Paula G.
