Just over a month later, when we are social distancing and have less control over available ingredients, this cookbook has become even more valuable. I can’t recommend it enough!

It is just as the title says, simple. Just one example is tofu—I haven’t eaten it in years, but I’m going to try the 4 options illustrated. He makes everything look amazing, and simple. I find this book particularly inspiring to eat healthy and make food that is more interesting.
