After the initial cleaning and a light "seasoning" I decided to cook my Blue Apron meal of chicken tacos in it. Let me start by telling you that my heat source is pretty darn awful. I have electric ring type of stove top in a very old apartment complex. Certain spots of the ring get hotter than others and I end up with uneven heating most of the time (no matter what I cook in). I used this to brown the chicken breasts (which were uneven in thickness). The chicken breasts had beautiful golden browning on the exterior and the inside cooked all the way through. All four pieces of them browned and cooked about the same. The only complaint (and reason for the 4 stars) is that they weren't the crispy type of browning I prefer. The thing to note is that I cooked the chicken on low-medium heat which is not what I normally do with a bare cast iron to get that extra crispy browning so this might be the reason why it didn't get a deeper browning. I cooked on low-medium because the directions from the manufacture said to cook it on low heat and other reviews have mentioned that as well to prevent sticking. There was only one piece of chicken that stuck a little, but I'm sure this will get better with use.
Overall, I'm very happy with this and will update with more use.
