1st, if you're cooking spare ribs or any that are bigger than the smaller baby backs, expect a hard time fitting them in the rack. While it can be done, the kicker is getting them out with a pair of tongs after cooked.
2nd problem, if you like to mop or spray your ribs to keep moist, you will have a hard time getting to them, especially the ribs located on the inside slots.The time it takes to mist or mop with adequate coverage will cause a major loss of heat in your smoker.
Finally, & most importantly, because the ribs end up being SO close together, there is no room for heat to effectively reach the surface area of each rack of ribs. This causes uneven cooking & a drastic difference in the amount of time it takes to cook your ribs.
I managed to overcome some of these problems by only using babybacks & not filling each slot, but then, I probably have enough room to just lay them flat on the shelves in my smokers. Thus, negating the need for the vertical rack in the first place. Although my rack rusted all to hell, I have been able to use a wire brush and sandpaper to smooth it. I then rinse, dry& immediately coat with cooking oil before putting the ribs in. I've had this sucker for about 4 years & other than the rust, it should be around for a while. It's pretty sturdy even though it's far from being nonstick.
If you're going to go to the effort of preparing ribs worth eating (ribs are bad for kids, btw, feed them hot dogs instead), this is definitely worth the investment! It's a specialized tool, what Alton Brown used to call a "uni-tasker" on his "Good Eats" show, but in this instance I'll make an exception -- this takes space to store, but it keeps your racks of ribs upright and orderly!!!
Consider this an essential grilling tool! And what an awesome gift this would be! Especially if you like eating ribs and you've got somebody to prepare them for you! Attach a note that says "HINT HINT HINT".
