PS -- the frosting recipes make A LOT of frosting. I have more than enough for another batch of cupcakes.
PSS -- I was a tad reluctant to use coffee in the chocolate cupcakes as I'm not a coffee drinker. While you can taste it in the batter , you can't taste the coffee in the end product. Also, I used decaf coffee instead of regular (as I didn't want the kiddies to get extra caffeine). I think that was fine.
Just made the vanilla cake with the strawberry daiquiri icing. It was absolutely to die for!
From my experiences making the cakes in the book, they are extraordinary. However, the volumes are a little off. The cakes need to be a little taller to fit into a 9" cake pan versus an 8" one. I had to use more frosting to make the cake look a bit taller. The ratios are all good though.
The whoopies section are delicious but the batter wasn't completely smooth, a little too bumpy in appearance and do not look like the Amish ones at the farmer's market. They tasted really good though.
The muffins I made are perfect and have the right amount of volume in each cup.
I think this cookbook could do with a makeover and have a photo made for EVERY SINGLE RECIPE so that the author and the publisher know what the heck it looks like when it's done.
The chocolate cake recipe is especially great. I would recommend making sure you use the brands she says and measuring by weight with a kitchen scale. These are scaled down recipes from what she makes in a bakery so measuring by weight is much more precise.
