Easy vegan "cheese" recipes!
This Christmas, I made vegan "goat" cheese for a figs-in-a-blanket appetizer. I made one batch of "goat" cheese for the figs, and an extra batch as a gift for my cousin. Everyone LOVED the "goat" cheese. The non-vegans could not tell the difference and my vegan cousin was excited to use the cheese for the rest of the week.The recipe was easy to follow and simple. I've never made any kind of cheese before and had no problem with this recipe. I had to purchase a few items that I did not have (nut milk bag, cheese molds) but will be using them again. I look forward to trying more of these recipes as I need to cut out dairy!

I was really hoping to see a picture with each recipe displaying what the final product could look like, most of the recipes have room on the page for that. I just received the book tonight, I was skimming through and I noticed an interesting error in the Colby Jack's "recipe tip", which I first noticed because the first thing I noticed about the recipe is that it is nut-free so when I saw the tip to help with "blooming" the 'cashew puree' I was a bit confused. I assume she may have meant cheese puree instead but I am not sure. I'll add a photo of the page as well
