The board arrives in a fairly rough, unsanded/unpolished condition. As it was, it was actually VERY difficult to slide the conveyor belt back and forth when a pizza was on it, even with a lot of flour underneath the belt. It was no-where near as easy looking as the videos online make it seem to be,
But, in the packaging was a note that mentioned you could sand and polish the wood to make it look better, and I assume work better too. So I took some rough emery cloth and really sanded down the slot in the wood to a smooth finish, then finish sanded the entire board- including the slot and the tip, and to top it off I polished the entire thing with a polishing wheel and some wood rouge. After I got the entire board about as smooth and shiny as I could for soft pine, I tried the peel again with a pizza this evening.... and oh baby, it was easy and smooth as could be! Absolutely night and day difference from before sanding and polishing it.
This is totally worth the $50, so if you're on the fence don't even think about buying a $20 traditional one. But definitely sand and polish it down yourself, especially at the tip and the slot, if you want to see the full potential of it. I'd rate it 5 stars all the way if it came finished better from the factory.... but who knows maybe they've improved their finish now so either way give it a shot!
Another thing - two small plastic connectors (for the cloth) are included and we mistakenly threw them away after unpacking. I substituted clothes pins (which worked ok) the first time I used the peel but knew I wanted the original connectors because I plan on using this thing for a long time. I emailed the Super Peel company asking if it was possible to buy a couple more. I received a reply almost immediately saying they'd put a couple in the mail with no charge - and included a cloth bag to store the peel(I think it's something new, mine had come with a plastic bag). I've never written a review before but this experience got me going.
The extra uses that came with the instructions convinced me that I'd made the right decision. (I've already used the cloth as a 'couche' for some baguettes and rolls)
And, yes, I can now whip the pizza dough in and out of the oven (and grill) without the nervous feeling that I used to get.

After posting this review I received an email from the company. They gave me additional tips for storing the peel and offered to replace it if the warping is too severe. As I stated below, placing it on the counter with something heavy on top returned it to its original condition. Apparently the best way to store it is with airflow on both sides. I'll look for a more appropriate location and try again. However, knowing that they are this attentive to their customers makes me even happier that I purchased this peel rather than the others. Cooks Illustrated is an excellent resource and they didn't let me down on this one.

As usual, I bought this after reading a review on Cooks Illustrated. I have never had an issue after buying a product they recommend. I wanted to start making pizza at home but knew the right tools would be essential. I love the pastry cloth on this board because it means I can rely less on corn meal to help the pizza slide on and off the peel. It has been easy to use and clean so I am satisfied overall. However, I have tried storing it in a few locations in my kitchen and it has a tendency to warp slightly if there is any degree of moisture. At first I stored it above the refrigerator on top of the pizza stone. It was fine for a week but after using it, washing it and putting it back I noticed significant warping. I placed it on my counter top with a heavy cutting board on top of it and my food processor on top of that. It reverted to its flat shape within a day.Read more ›
