It's easy to clean. It sits in the sink if you want it to, saving more dishes to wash. The hardware on the unit hasn't rusted. Most importantly, the thing hasn't broken! We have broken other tofu presses but this one survives.
The secret to eating tasty tofu is pressing it. The way to press it, easily and over the long term, is with this unit. The spring action seems to help and we love that it's adjustable over a wide range. We can fast press the tofu if we are in a hurry or we can slow press it with less pressure forming a better piece of tofu if we plan it out. The slow method takes an hour or two. The fast method will press tofu in less than five minutes, it's not perfect, but we do it when we are on the go.
We've bought at few for family and I recommend this thing to anyone who asks us how to prepare tofu.
The press does a better job than I could do on my own, too. It gets more water out with less damage to the block of tofu. My cooked tofu is coming out fantastic—more flavorful and better textured than any tofu I made before this purchase.
It's also easy to clean and seems to be robust. However, it does contain springs, which can become weaker if stored improperly. I take care to unwind the springs all the way when I'm done using it.
BTW - when the tofu's dry, crumble it, mix with chili powder, then brown in a skillet (don't burn! stir frequently). Use as a chili base or add to a hearty fall (or winter) stew, with lots of vegetables - - Qt. jar of home canned tomatoes, 2 big onions sliced, several cloves sliced garlic, chunked sweet potato, kale, celery, parsley, mushrooms, can of garbanzo beans with liquid, 2 TBL "Better Than Bouillon" low sodium. Let simmer for an hour or two, but watch, it's thick and can burn. So crock-pot it, or get to a boil and put covered pot in oven at 250 F, then you don't have to worry about scorching. My wife asked for seconds.
The first and only time I tried to press tofu with the plate and weight method I nearly squashed it. The nest day I ordered this press and put it to use the day it arrived. Sure I could have perfected the weights and plates but this thing is beyond easy to use. Tighten the knobs down to compress the top springs half way, set it on a plate to catch water and let it be for awhile. After a few times you'll get a feel for how much to crank it down and how long to keep it clamped to expel or retain moisture.
I'm very happy with this item.
