In this book, Kelly once again focuses on ten everyday superfoods: Avocado, Cauliflower, Citrus Fruit, Almonds, Quinoa, Olive Oil, Eggs, Lentils, Sweet Potatoes, and Spinach. Each recipe in the book will include one or more of these core ingredients. There are quite a few recipes that call for a Quinoa-Lentil blend (recipe is in the book.) If you make that ahead of time (takes about 20-25 minutes), one time during the week, all the other recipes should only take 30 min or less to make.
The first thing I cooked was the Sweet Potato Noodle & Egg Tacos with Citrus Guac (in the breakfast for dinner section). Now full disclosure, I'm from Texas and we take our guac very seriously down there...almost as serious as we take our BBQ! So when I read that the citrus in the guac comes from a diced up orange I raised my eyebrows and thought, "Well, how's this going to work?" Well let me tell you dear sir or madam...IT TOTALLY WORKS! Every aspect of this dish was amazing! Remember in the first part of my review I said that one of my guests said, "This is epic!" This was the dish. Thank goodness I have been cooking Kelly's recipes for sometime now (from her blog and her first cookbook) so I've learned to trust her...even when it says to put oranges in the guac!
In the breakfast for dinner section, I also made Sweet Potato Pancakes (which used the quinoa-lentil blend, but you'd never know it) and as a special treat on Christmas day I made the Breakfast Berry Cobbler (also using the quinoa-lentil blend.) The sweet potato pancakes were great, but that berry cobbler...I dream about it with my eyes open. It was so fantastic and filled the house with such a wonderful smell. I don't want to twist your arm or anything, but if you buy this cookbook this should be one of the first 3 recipes you make...if not the first! Just my opinion of course. :-)
We also tried the Chocolate-Avocado Bark with Orange Zest and Almonds for a holiday party. It was so very good and a little dangerous too. We couldn't stop eating it!
The last thing we tried was the Superfood Cornbread Muffins to go with her Tuscan Kale Soup (from her first cookbook Superfoods at Every Meal) It was a great addition to a soup that is already a favorite in this household.

One worry I always have when getting a cookbook is will I be able to find the ingredients listed in my local grocery store. Well if it helps anyone out there, all these ingredients seem pretty normal and I have found all I have needed at Walmart and Kroger...even things like Coconut Flour and Almond Flour. But for the most part, these recipes call for ingredients that you have probably already been using.
The one thing I would recommend getting if you don't have one already is a spiralizer. They are easy to use and not very expensive. But don't worry, if you don't get one, you'll still be able cook plenty in the book. But just get one and I'm positive you won't regret it after cooking just one of the dishes that call for you to spiralize something.
I highly recommend this cookbook! You and the people you cook for will thank you!
Tonight for dinner we are making her Crab and Corn Chowder. I love that there's a book of healthy, quick meals that includes veggies in new, creative ways that I wouldn't have thought of myself. Cauliflower tacos?! YES PLEASE. The photos are absolutely gorgeous too. I can't wait to cook my way through this book. My kids are excited too.
