However, what I did not expect was how easily the pan would lose its shape. I always wait until my pans have cooled to room temperature before washing them to avoid warping them. I was surprised that after just 3 months of use, this pan is no longer flat and circular. I expected the pan to be more durable than it has proven to be. The pan is still usable, but I have purchased Sugiyama Metal Wide Frypan for almost the same price. This wide pan has enough space to cook and lighter than T-fal one. T-fal is one of Japanese reliable brand, but some of their pan might be defective(?) as other reviewers mentioned.
"Please note that cookware is generally designed with a slightly raised center to allow for the expansion of the metals during the heating or cooking process."
This is simply not true and to prove it I set out some of my pans and added a bit of water. From the picture you can see the T-fal pans are the only ones that have a raised middle and the water pools to the edge. All the other pans the water was evenly distributed and not pooling to the outside edge.
I cook all the time and anyone that knows me calls me a hard core foodie. I take my cooking seriously and I cannot recommend T-fal non-stick pans. If you want a good quality non-stick pan spend $10 more and get the one in the right side of the pan. Search for "stone earth pan" and get the value for you money.
For those of you new to iron cookware, the advantages of an iron skillet are numerous; First, if you have a crappy oven and / or no grill, a skillet is the best way to make steaks or chops, as it can be heated in the over (at the bottom) up to about 500-550 degrees, and will then sear the meat, leaving a crusted skin and tender cooked meat inside. Works much better than a broiler, and can be heated in the oven to a much higher temperature than any non-stick (Teflon) coated pan.
Second, a fully seasoned skillet does have some advantages in taste versus non-stick. This is pretty subjective, but I at least can tell the difference in things like potatoes and vegetables made in my skillet versus Teflon. The non-stick stuff is still very useful (like for things like eggs that are very sticky, or for most types of fish which is comparatively delicate) but a good skillet is excellent for meats in particular, and also for potatoes.
I've read the negative reviews and have had none of the issues cited there with this pan over a month of frequent use. No cracks, and the cooking went well once I did the minimal additional seasoning mentioned above. I wouldn't use the skillet as it comes right out of the box, as the surface was rather pebbly, but for iron cookware at this price point, this does not amaze me too much.
Just a few notes on the limitations of iron cookware: the skillet is very heavy, and the handle heats up only slightly slower than the central part, so if you are cooking at high temps for a long time, you will need mitts to grip even the handle. Finally, the pan needs to be guarded carefully against rust, and so even after it is cleaned (with no soap, only hot water and a brush or scraper!) and dried with a towel, you need to heat the skillet for a few minutes at about 300 degrees or so to dry all the water off it. Finally, the pan will need to be re-seasoned occasionally using the grapeseed oil method I mention above. (You can also use lard if you are a traditionalist!) As long as you don't mind all these issues, iron cooking is fun and tasty, and is especially useful for apartment dwellers with grill envy!
This is a good pan at a good price, and other than the rather minimal factory pre-seasoning as supplied, has no issues.
