S.Roystone Neverson was born in Vessigny, La Brea, Trinidad and Tobago. Educated at the University of Manchester, England. Holds a Master of Education degree, specializing in Planning and Development of Education, lectured in the Caribbean, India, Sri Lanka, New Zealand, Ghana, Zambia, Belize, Guyana, Fiji, and Bangladesh. He has also written, Godism Discovering the Power to Live, Vital Force the Path to Your Power, Oil in My Lamp, and How to Get Self-Confidence in 12 Steps and several other books. He is retired and lives in Trinidad and Tobago with his wife. She has dementia. He takes care of her.

The author provides some great information about Trinidad and Tobago culture and Carnival. While we have never gone, it has now become one of the destinations on the top of our list. We did not know that Carnival can also be enjoyed in larger cities here in the United States such as Miami, Houston and naturally New York.
Since many cultures have contributed to the cuisine of the Trini menu, the recipes presented in the book offer something for everyone and every taste. Of course seasoned foods make up many of the recipes so be prepared to liven your taste buds.
So if you are ready to experience chicken, corned beef and curried vegetables as never before, be sure to get this book. You will not regret it.
Love the introduction where they talka bout different aspects of the carnival around the world.
The food and so much more. Each recipe starts out with an explanation of what the dish is, list of ingredients and you should be able to substitute for your healthier dietary needs: low sodium, low sugar, low fat products.
There are a LOT of ingredients in the recipes. Directions are given in how to make them and Servings is listed. There is no time listed but it would appear to take quite some time to make.
There are NO pictures. There is NO nutritional information.

I have only try out the first recipe for Panorama Corn Soup, and I have to say in has a lot of ingredients! I wasn't too sure on how they would all go together. After making it I was certainly surprised by the flavor, lots of it. It was very easy to follow and I can't wait to try the others out with my friends.
And the type of recipes is one of my favorites! I was particularly happy to see a recipe using shark. If you've never eaten fresh shark, you don't know what you're missing! I've only had it grilled so when I saw the "Bake an' Shark Maracas" I started salivating :)
If you enjoy spicy foods, flavor-wise, in a Jamaican-esq style, you can't go wrong with this book of recipes!
If you a looking for some really different recipes you will find some here and I'm sure they are delicious.
