Pork Tinga Slow Cooker Tacos

Servings: 6 to 8 (Makes About 4 Cups Cooked Pork)

1. To make the sauce, start by setting a large skillet over medium heat and add the oil.

2. Once hot, add the onion and tomatoes and cook, stirring frequently, for 5 minutes.

3. Add the tomatillo salsa and garlic, cook 1 more minute.

4. Stir in the chipotle and adobo and remove from the heat.

5. Allow to cool slightly, then transfer to a blender along with the broth or water and carefully puree until smooth (alternatively, you can use an immersion blender to puree).

6. Place pork in the bottom of a 5- to 6-quart slow cooker.

7. Pour pureed sauce over the pork, then cover with a lid and cook on low for 8 to 9 hours.

8. After the pork has been cooked, use two forks to shred the pork (this can be done inside the slow cooker).

9. Toss with the sauce and cook an additional 10 to 15 minutes to meld flavors. Season to taste with salt and pepper.

11. To make the tacos, serve pork in warmed tortillas topped with toppings of your choice.

  • 1 tablespoon vegetable oil, 2 cloves garlic (minced)
  • 1 large yellow onion, 1 large tomato (both chopped)
  • 1 (7-ounce) can tomatillo salsa
  • 1 chipotle chile canned in adobo, 1 tablespoon adobo sauce
  • ¼ cup low-sodium chicken broth or water
  • 1 (2- to 2½-pound) boneless pork loin roast
  • 12 (6-inch) corn tortillas, warmed
  • Toppings: shredded lettuce, shredded cabbage, thinly sliced radish, crumbled cotija cheese, avocado

Such a beautiful cookbook. I am the type of cook that loves pictures in cookbooks - I like to see the results before I make it and this cookbook has exactly that. The pictures are amazing and the recipes are great! I have made a few recipes already and they are quite unique and a fun take on tacos. I can't wait to try more. Ingredients in recipes are fresh, healthy and not overly complicated. Some other fun things about the book are cooking tips and tricks and tortilla recipes. So happy I bought this book!

I bought this book because of my family's love for tacos. I was so happy to see so many beautiful pictures and recipes I could actually make!!! No fussy weird ingredients and it is easy to make substitutions for what you don't have or like. I have this author's Fertility Foods cook book too, which I use because I just like to eat tasty and healthy foods (we love to eat in my house) and feed my kids healthy foods. I am so glad this book is just as good. It does the creative thinking for me.
Aside from its huge recipe bank, it covers grocery tips, pantry tips, cooking tips and even talks about how to use the book.
I highly recommend this book if you love tacos and want to mix it up aside from your usual recipe. I also recommend this book as a gift!

This is such a special book! It's the perfect blend of interesting, fun and "fit for foodies, " while being approachable, versatile and practical. It has beautiful pictures too. I was looking for a book of easy recipes for weeknight meals and this is so much more. It is going to be a weekly go-to in our household for both day-to-day and special occasions. LOVE!

I recently purchased this cookbook because my husband & son LOVE TACOS! And, I wanted to incorporate more interesting ingredients than just ground beef & cheese. Well, this book delivers! Incredible recipes that are delicious, healthy, and EASY for weeknight meals. This book is now my go-to cookbook to make a meal that my whole family will LOVE!

The ONLY taco cookbook you will ever need. Seriously, the most amazing Baja Fish taco recipe around. Super easy, super delicious, and just so happens to be super healthy too! Sara keeps the tone lighthearted and entertaining so it's an enjoyable read as well.

This is not a review so much as a suggestion. I see this quite often with cookbooks. The part in the beginning that we are allowed to read so that we can decide if we are interested in the book stops before the customer can see any of the recipes. Why would I buy a book when I cannot see what any of the recipes may be like or even see what type of recipes are in the book as there is no list of recipes in the front? I was actually interested in this book but felt that I could not buy it as I was unable to get a proper preview the way it's set up.

I have to admit I wasn't sure about this book at first, I loved the promise of it right away as I am not a taco purist, but I love tacos. But the author's admition that she was a dietitian and her subsequent promise that she wrote the book not as a dietitian but as a lover of good food put me off at first. I think I literally said "yeah I've heard that before." out loud. I was pleasantly very surprised that she kept that promise. There are plenty of heavier ooey gooey cheese type tacos (my wifes preferance) and lots of lighter (and I mean more in terms of heaviness than terms of less calories.) tacos as well (roasted peppers and feta in a taco? yes please!). I loved how the author writes her recipies, with a fun and fresh voice with enough enthusiasm to get you curious about a dish but not so much enthusiasm that you wonder what she's hiding. The only thing that kept this from being a 5 star review is that the setup of the kindle version needs a major overhaul. The instructions and the lists of ingredients are separated and set up in an inconvenient way. Still adore the book, but the digital editor should be sacked.

4 people in my family own this! My step son (14) in USA, my nephew (14) uk, my mother and now myself! It's a great ideas book with loads of options. Highly recommend for anyone who loves fajitas and tacos but gets stuck in the "mince and cheese" rut!
