I'm a Midwestern American that cooks. That means I deep fat fry. True, I am not from Iowa where they deep fry everything, but I can get to Iowa in about four hours. So, deep fat frying is a part of my life.
For years, I used deep fat fryers, like a Fry Daddy. Overtime, I got tired of how greasy and gross they got. I could never store them with other appliances as they always just seemed to radiate grease. I decided to use a wok instead, and this was the right decision! Easy to clean, have to change the oil each time (honestly, this makes for better frying anyway), and multiple other purposes...
The only problem is not knowing the temperature of the oil. If too low, what you are frying will become disgustingly greasy. If too hot, it burns up! I got into the habit of using a 'first batch' to check temperatures, which is rather wasteful. So as to avoid this, I took the advice of the American's Test Kitchen a purchased a candy thermometer. I chose the Taylor Precision thermometer as it was cheap and an add on item.
Needless to say, I was excited to use it for the first time! I poured in the oil, heated it up, and then attempted to clip on the thermometer. Two big issues immediately occurred. First, the thermometer is a little too big for my wok. The end reached done to the bottom of the pan and has to sit at an angle so as to not touch the bottom. Second, as soon as I got it positioned right, the metal clip device that is supposed to keep it in place began to slip. Before I could stop it, the thermometer was in the wok! Three times this happened in a row, and soon I had a very greasy thermometer. I have tried every possible arrangement of position and this thermometer ALWAYS slips off.
What gets worse, once the thermometer makes the 'plunge', it fogs up on the inside so I cannot view the temperature. This makes it pretty much pointless for what I am using it for, and I've gone back to the 'first batch' approach.
I do believe that this thermometer will work for folks with a pan with a lip or vertical sides. What is needed for it to work properly is some way for the metal clip to attach to the side of the pan. This isn't going to happen for my wok, so until the day I get another wok, this thermometer will sit in my drawer.
