To add to my confusion, there is the long running debate between end grain and edge grain boards, not to mention the wood type war that rages among cutting board effecinatos. To say that it can get confusing is an understatement.
Needless to say, when I came upon the Proteak cutting board, I was impressed. I was impressed with the size, the quality, the appearance, and the price. Yep. The price is quite impressive, but if you want a cutting board that will instantly become your favorite board, it is worth the cost....and believe me when I tell you that there are many similar cutting boards out there that cost quite a bit more than this one.
First, let me explain the differences between End Grain and Edge Grain...
Edge grain (long strips of wood, laying side by side to create your cutting board surface) absorbs less and takes less wood to make a board so they are often more cost effective.
End grain (smaller blocks of wood, with the age rings showing, placed side by side to create a cutting board surface that consists of many different squares. Butcher Block boards are made from end grain wood. End grain is considered, by some, to be the least abrasive cutting surface for your knife edge and has been described as "self healing", which means that the small cuts on the surface of the board may close back up to some degree. This happens primarily because end grain wood is more moisture absorbent. Personally, I am not sure if that is a good thing or a bad thing.Read more ›
The one I received has at least 4 different wood plugs in it where they put in round other pieces of wood to fill in what I imagine where holes or defects in the wood. This frankly looks very cheap and unprofessional, and should not have even been made like this! Perhaps their quality has decreased lately but this is really unacceptable.
I'm returning it for something else.
*update 11/1* a few issues with the board already....I've oiled the board on each side several times, and when I wash the board, I can feel the grain lifting on the surface of the board in some areas. feels very rough. The other day using the board I noticed that it was warped, pressing on one long edge, the other long edge was about 1/8 inch off the counter
*update 4 mos...the board is cut to hell, I use it daily and have switched from oil to spoon butter with better results. The board cups and flattens from washing or humidity, I flip and use the other side. or use it on a towel. a good board overall, it's taking a lot of cuts, but next time I'll try an end grain maple. or walnut.
The quality if excellent and the board is beautiful. I need to order one more, larger one, but this one is just what I wanted. I leave it on the counter all the time and use it for everything. It's quite heavy and thick and doesn't slide around, which is a big improvement over the cutting board I've been using for the past 15 years. I always had to hold that one down. This one is heavier and I think that helps keep it steady. Great board.
