We make chia seed pudding, use it in baking, cooking, and smoothies. This brand in particular works the best of any I've used. It's consistent in recipes.
For any newbies to canned coconut milk: the top part is solid and the bottom is where the "milk" is. A trick I've learned through the years is to open the can from the bottom if you just want to use the milk in a recipe. But the solid part on top can be mixed into most things as well, and it is delicious!
The only issue I have is that it comes in a can...I wish it came in a jar so I could re-seal it.
Just to make you aware... when you open the can, the top half will be solidified and the bottom half is liquid. I ended up putting it into a measuring cup and microwaving it for about 20 to 30 seconds. Then it was usable...it's just an extra step.
You can also make whipped "cream" with just the top, solidified portion. Don't put it in the microwave, you actually need to refrigerate it for a couple of hours. Then, using an electric mixer, whip it until it's soft and air has been incorporated.
With it being both organic and dairy free, at the prime pantry price, this is an awesome product.
Love making indian spiced tomato and coconut soup with this, Muir Glen Organic Crushed Tomatoes, Fire Roasted, 14.5-Ounce Cans (Pack of 12) and Bob's Red Mill Shredded Coconut Unsweetened, 12-Ounce (Pack of 4)
Yum, yum! Smile. Enjoy!
I also like that it doesn't have carageenan or some of the other fillers in it. I'm comfortable with the guar gum.
