For the 7, I use my DSLR (Nikon D700) which comfortably fits my 50mm f/1.8, 85mm f/1.8, and my zoom 24-120 f/4 with room to spare. I don't have to worry about taking off my lenses when I store them on the body because they all fit very nicely. On top of what I mentioned above, there would be room for a flash and accessories (extra batteries, charger, etc). I think even then you could probably fit more stuff, but I'd rather not stuff a bag to the max and instead let things sit in there comfortably.
For my 5 I keep my mirrorless (Fuji) gear, and they work out great.
I hope I'm not being too grandiose in saying that feel like this bag would last for a long time. It feels like the kind of bag you would potentially pass along to your kids. It's classic, sturdy, versatile, discrete, comfortable to carry. Highly, highly recommended.
I needed something I could carry daily that wasn't huge, but that would fit either my mirrorless or DSLR, and my iPad with keyboard case. That's it. I also wanted one that didn't specifically look like a camera case. This is it. Wish I had found it years ago. Build quality is solid, plenty of pockets for batteries, charger, pens, etc. Every piece of Velcro has a method for silencing it. Rain cover is a nice touch. Definitely worth every penny.
Most interestingly, a flight attendant took time out to compliment it.
