I discovered I was gluten intolerant in 2004, and struggled with accepting what I considered a "loss" for a long time. Foods I never expected to contain gluten made me ill. I found myself over-eating items I knew were safe, simply because I knew I could
eat them. And sometimes, I'd eat something I knew was off-limits, hoping my condition had magically disappeared, only to suffer for it later.
I developed these recipes because I refuse to do without. I never feel restricted any more, and my eating is under control. The first time I served gluten free French bread, the surprise on my friends' faces was priceless. They could not believe they were eating gluten free. Now, many friends beg me to bring "my" food to gatherings, because they want to eat it, too.
I hope you can find comfort in these recipes like I have.
