Vadym Graifer is a Canadian-based author and photographer. Being diagnosed at the age of 52 with Type 2 Diabetes, overweight and taking medications for high blood pressure, he started a quest to lose weight. His approach included replacing sugary food and drinks with their healthier equivalents, incorporating fermented foods in his menu and applying intermittent fasting. As a result, he shed 75 pounds, stabilized at his ideal weight point and reversed his diabetes and hypertension, eliminating the need for medications.

It was interesting to see a whole bunch of unique and very easy recipes blended in the body of the book so I could see exactly what is being discussed and how it's relevant. I also like how the author covered the idea of not snacking and how long runs on a treadmill is not that beneficial for weight loss due to very low calorie burn - things I was actually thinking about myself as well.
I was expecting an outline/summary of a personal plan in the back of the book to make it easier to visualize how to put it all together, but that's not a problem - I will just go through the book again and take notes.
Recommend this book to folks that sit all day in the office and allow their work become a higher priority than their health while gaining weight, lacking energy and feeling miserable.
Appreciate the author taking his time to compile and analyze the endless body of research on this subject and provide his own thoughts and experience.
That said, I understand the need in the timeline and the “basics first” approach. I just want to make a point that you can jump right to the third part if you want to start weight loss program right away. Unless you are sugar-addicted, in which case you probably better spend two-three weeks with methods described in the first part (replacement of sugar and starch). Ideas and recipes from the second (fermented foods) can wait if you are in a hurry. While beneficial overall and delicious, they are not imperative to weight loss.
Actually, author himself suggests to “pick and choose.” So, to make it short:
1. If all you need is to lose weight and your current diet is not heavy on sugar and carbs, you can start with the third part (book calls them prongs) right away, and then go over first two selecting what you like.
2. If you have addiction to sweets and refined carbs, begin with the first prong, then jump to the third.
3. Go over methods and recipes in the second prong whenever. My gf, while not new to fermentation, did find a few delightful things in there that were new for us.
With help of this book you could create your own personalized healthcare without leaving your kitchen for a healthier You.
