I've owned about 30 paring knives over the last 5 years. Short of a $300 Takeda, this is my favorite parer. It's quality blows away Shun, Kyocera, Wusthof, Global, and other mid-low end brands as such which tend to be sensationalized far above their quality/performance.

Steel-wise, this is a VG-10 laminate treated to high-hardness (60.5 HRC IIRC). When done right, VG-10 is an excellent steel. And Tojiro does VG-10 right. It holds an edge pretty well, it has a lot of toughness, and it has excellent corrosion resistance. And it is easy to sharpen. Unlike Shun's VG-10, the heat treatment on Tojiro's VG-10 yields a good performing knife and is not "chippy" like Shuns often are. At the same time, they are not overly thick like many other parers, so they are still great slicers.

The edge geometry on this knife is excellent. The grind is consistent, the angle is consistent, the finishing was well-done, and the tip was perfectly shaped.

Fit and finish wise, this knife blows most anything else in its price away. The micarta handle is fit like a glove, the rivets are finished perfectly, the brush lines are smooth, and no overly sharp or overly ground portions are on the knife. It feels like a much more expensive knife than it is.

I also think this blade is by far the best design for a parer. Using a single and totally flat plane, you have a flat surface and are left with a "beak tip" that allows you to perform a few small knife functions where control is a must and an upsweeping tip is not ideal. Coring, boning, center slicing, etc. work well. The expense is you cannot do rocking cuts with this knife, but I do not know anyone who uses the Fulcrum motion with a knife under 6 inches, let alone 3.5.

I have been putting this medium-large paring knife through its paces for several weeks now. It was sharp when I got it. I like VG10 steel, but I do not like sharpening it. You must take care of the burr. This is a medium hard steel with superior performance in every way so long as you can maintain it. To be clear, this is in no way a high maintenance knife; the sharp blade stays sharp for longer than I expected.

It outperformed my paring knife in its ability to articulate small spaces with its tip. It was just as sharp but better on a full draw towards me.

I use a ceramic wand instead of a sharpening steel to set up the teeth between sharpening because steels are nearly always too soft. When I had this knife sharpened, the VG 10 came alive. Now I love this for decorative work as well as the everyday paring duties accomplished by this substantial blade.

High value. Amazing to get VG10 at this price! Who would by a $15 junk paring knife at a typical home store when you can get this at this price-point. Fit and finish is not great, but on par with junk knives you'll find at big box stores. I was not sure I'd like the slant of the blade, I'm used to more traditional (European) paring knives. But the design is a WIN. In my experience, the slant does not keep you from using the paring knife in a traditional manner, but it does help you to work it with a cutting board better.

My one critique is that the sharpened bevel is not even, meaning that the grind is off a bit (probably). Normally, I'd give a poor rating for that, but at the price I paid....with VG10 steel and a great slant design, I can't complain. Indeed, I now own 2 of these!

Razor sharp, full tang, well balanced and great value for what you pay. Easily exceeds quality and sharpness and quality of my Wustof knives. Like any quality tool you need to take care of it. Don't throw it in a drawer without some sort of protection. The knife comes in a box with a plastic shield for the blade which should work for short term. Handwash only and keep your fingers away from the blade. Reviews and comments regarding the sharpness of this blade are not exaggerations.

Very nice little paring blade. I like it. Make sure you understand this type of steel and allow yourself to get used to the straight shape. Wash the acids off and run it by a steel occasionally. It will serve you well.

Out of the box this is pretty sharp. However, it definitely benefited from a few minutes on a loaded leather strop. The steel quality is very nice and I was able to get the edge hair popping sharp quickly. The straight blade works very well and the overall size/blade shape makes this my preferred parer over my Henkel and shun.

Only complaint is the finish. The steel is finished nicely but the handles have micro chips throughout and the polished handles are not consistently finished with some dull spots. At $50 for a parer I wouldn't consider this a budget knife but an overall good value. If they could finish this knife a little better this would be perfect.

The knife comes with a soft plastic blade protector a d a very attractive gold box.
