Product Description

Tojiro DP series features a full-tang and 3-ply clad construction with a core of VG-10 super steel encased by two layers of highly rigid and rust resistant stainless steel. This formula of steel results in a 60 Rockwell Hardness, and provides a 9 to 12 degree blade angle for scalpel-like sharpness. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. Every knife is meticulously hand finished by a artisan craftsmen. The Tojiro DP series offers a large selection of blade shapes and sizes to cover all your Asian and Western culinary tasks. Made in Japan. Lifetime Warranty.

This knife is so sharp it's scary. I wanted a shun, but it is out of my price range. So I gave this a try. Wow. I am impressed. The workmanship is excellent. It goes through pretty much anything like butter. Nice weight and grip handling. I own other expensive knives but this has been my go to knife for everyday use. The quality of the product vs what you pay for it is such a bargain. Tojiro clearly can compete with the big boys in vanadium steel.

Wow this is a beautiful knife. Razor sharp right out of the box. I have been using it everyday for a week now and it still performs as if brand new. The handle feels right and it has a great balance for cutting all sorts of veggies. This is my 4th Tojiro knife I have bought so far and it is my favorite. The blade is the perfect shape for my needs and besides my santoku this is the very best knife I have ever owned. Do yourself a favor and buy tojiro knives. Amazing quality and they look great. If you want a show piece knife get their Damascus line, but save your money and avoid wusthof and shun. They are essentially the same knives as tojiro as far as blade strength and sharpness. High quality knives that last forever.

Superb knife for vegetables. Super thin and sharp blade that will glide through even hard winter root veggies. Holds an edge exceptionally well. Excellent craftsmanship. I have been adding knives to my old Henkels set (which continues to be serviceable after 30 years) and settled on the Tojiro knives. I now have half a dozen of them. This is my first non 5 star rating on a Tojiro, and I am sure that there are plenty of purists that will not agree with me. My sole issue is that this knife has no bolster on the cutting edge of the knife towards your hand. This has led me to nick myself a couple of times. I am sure with time I will get used to this, and will do a better job of keeping my hands from the edge. Al of the Henkels I learned on are well protected in this area so it will take a bit of adjustment. This is as sharp as a scalpel: just a tiny touch will make a razor cut. I am likely to grind the corner down to reduce accidents. I will also not be letting people with weak knife skills touch this.

I really like the balance (right where the blade and handle meet) and heft of this knife (7 oz or 199 grams). Knife is very sharp out of the box. I like the zinging sound it makes. Blade is 6.5 inches long, excellent finish and quality. It's my new go-to knife.

Tojito make great knives; this is my third. I had never used a knife this shape before, preferring a standard 8" chef knife for almost everything, but as I use this more, it is very practical for vegetable prep.

It's basic looking - a tool, not a kitchen ornament. Workmanship is good (no gaps, well ground), nicely balanced, razor sharp out of the box and holds an edge. For the price, I can't imagine finding a better knife.

Just tried it and I couldn't believe how easily this thing cuts through veggies!! It's my first Japanese knife (all others are German--Twin Four Star and Wusthof Classic), and now I understand what other people are saying about Japanese vs German knives. Compared to this knife, my brand new Wusthof Chai Dao feels dull and clunky. And, this knife costs only 40% of that Wusthof. I will have to wait and see how well this knife performs in the long run, but the first impression is nothing short of "Wow!"
