From the original bamboo cutting board company, Totally Bamboo, this chopping bowl set is a beautiful, functional, ecologically sound addition to any kitchen. Bamboo is 16% harder than maple, making it an excellent cutting surface. Bamboo is actually a grass that grows to a harvestable height of 60 feet in about 3 to 5 years, growing as much as 2 feet per day. It has an extensive root system that continually sends up new shoots, naturally replenishing itself. It does not require replanting, making it one of the most renewable resources known. Totally Bamboo uses 'Moso' timber bamboo which is neither a food source nor a habitat for the Giant Panda. Totally Bamboo's cutting boards are assembled with approved food-grade glue -- none of their products are made with formaldehyde-based glue. No dyes or stains are used in the manufacturing process. The pleasing designs are created by using the natural variations within the wood grain. The chopping bowl set includes one bamboo bowl, one bamboo pestle, and one bamboo-handled ulu (curved cutting blade). I have a custom "ulu" at home forged by a well known maker but wanted something for everyday use which my wife would be comfortable using.

Also, my standard rock maple Boos cutting board is not ideal for using with an ulu since it doesn't have the concave bowl surface so handy for using with certain types of cutting.

I was concerned (being a knife collector and a "steel snob")that the ulu included with this set would be of inferior quality. However, I was pleasantly surprised when this set arrived this afternoon and found that not only was the bowl solid and attractive but the ulu appeared to be well constructed and came with a reasonably sharp edge.

The pestle was also very solid and well made and a very clever idea to enhance the utility of the bowl.

I would probably have balked at the retail price of $70 for the set but at under $50 shipped via amazon I think it's a good deal for the quality of materials and utility received.

This might not be something that i would splurge on normally- which made it a perfect gift! I use it often to chop herbs and garlic and occasionally use the mortar/pestle function to make the herbs into a paste.

I bought some mineral oil to care for the bamboo. I apply it after every other use, or when it starts to look dry.
