Iin years pas, I could buy this coconut cream to make my healthy dream 'dessert'! Finally, after 1 year. I was able to make it to Trader Joe's to buy it & majorly stock up on it. What a bummer, wh3n, after having refrigerated a can of it for several days, it was loaded with water! I felt cheated! I didn't drain it all because then, I'd be left with so little! I did my coconut cream mix with vanilla, raw honey & cacao & 'whipped' them together hoping to see my longed for treat. A smooth whipped yum! You can see in the pic it is very gritty because of the high water content! Now where do I go to make the 1 treat I can have? Huge disappointment!
Thought I would mention the best way I've used this was not straight from the can, instead empty contents of can into a bowl that you can seal up and put in the fridge. Most likely you will see some separation of oils and coconut from the can. Mix well in the bowl at room temperature and then put a lid on and refrigerate. Once cold it will turn into a much better creamy texture and smell better too. NOTE: If chilled well, you should get almost 2 weeks per can. That's why I prefer smaller cans because this will spoil quickly. Treat it like opened almond milk or any dairy product so not to go rancid on you.
As far as recipes, I put about 1tbsp per 12oz of blended smoothies for a nice texture and more satisfying richer taste that will keep you feeling fuller longer between meals. Can add it to basically anything that calls for cream too.
So this stuff will be solid when you open it, for those who have not dealt with coconut products before. They require heating in order to become liquid. The coconut cream was precisely what I wanted and very good quality. The only hesitation I have about this product is that the tins were badly dented when we got them. The top was not deformed so we were fine with the manual tin opener, but an automatic tin opener would not have taken them. That being said, the product itself is excellent.
This stuff was awesome while I did my Whole 30. If you love creamy coffee and abstain from dairy or chemical laden creamers this stuff was the bomb! Unfortunately Trader Joe's discontinued carrying this magical cream so I had to buy on Amazon for 3 times the TJ price! Ouch! This stuff is creamy, thick and delicious but I cannot justify 5.00 a can! I will miss it terribly :(
I bought two cans of this. One arrived with a large dent towards the middle of the can and where it was packed well and the dent could not have happened in shipping. I am very disappointed that Amazon would allow a seller to send out food in a dented can. It is not worth my time to repackage and return it, nor should I have to. The only reason I gave two stars instead of one is that the second can did not have a dent. Anyone packing this would have seen the dent. It is not tiny. Most experts say don't use food that was stored in a dented can so I will be throwing it away.
TJ's is pretty far from my new apartment and I use this decadent, creamy, white gold every day. Getting two cans shipped to my door in 2 days with Prime is a godsend. Fab price, too.
This can be used in any recipe in place of dairy heavy cream. I use it for whipped topping, in cream based soups, in cakes or cupcakes, and in my baby's puréed food. It's fabulous in hot cocoa or mashed potatoes. It's a wonder food for sure.
So glad I can buy this online right now, since our store has stopped carrying it! This is very thick coconut "cream". It's thicker than coconut milk, which is what I like about it. It creates a creamier texture.
I cannot consume dairy products, so I use this to make drinks creamier (coffee, breakfast shakes, etc). It can also be used in cooking, but I admit I have not attempted that yet.
If you are looking for pure coconut cream this is not it. The ingredients aren't listed on the site. They are: coconut extracted, sodium carboxy methyl Cellulose, xanthan gum, water. For the price you might as well get thai kitchen full-fat organic coconut milk. It has fewer ingredients and is available cheaper at the store.
I am clueless why Trader Joe's discontinued this and went with the organic equivalent which is not good. This stuff can be easily placed in a processor and whips up to a firm (whip cream) texture that does not separate. Unfortunately it sold there for $2 a can so I am searching for an alternative.
