I could not have been more pleased with the outcome.
I used the Pillowy Soft Dinner Rolls recipe from the Let Them Eat GF Cake blog, and 4 ounces of dough per roll. Note that a single recipe will only make 8 rolls of this size.

So why did I give it 5 stars? And why do I recommend it to everyone who eats our hot dog rolls?
Because:
I changed the recipe to make lighter rolls,
I used 2/3 the quantities in my recipe so that the rolls did not rise outside the pan,
I put a cast iron griddle on top to stop the rolls from rising and to make the bottoms even (the bottom forms the rounded tops of the buns; the top forms the flat bottoms).
Because:
the pan is sturdily made, it distributes heat evenly, it is a professional quality pan, is nonstick, will last forever, and forms hot dog rolls with perfect rounded tops.
Because:
I can make organic tasty hot dog rolls served with healthful nitrate-free weiners,
everyone loves them,
our young grandsons ask for them instead of purchased hot dog rolls every time they come,
we have a hard time finding whole grain hot dog buns where we live; organic buns are not available here;
I can make fresh buns even for unexpected company with a bread machine to make the dough,
I just roll out the dough to the size of the pan, drop the dough in, and let it rise. No rolling out 10 buns and trying to shape each one individually.\,
all rolls are the same size and shape.
And I recommend it to everyone because:
if I don't, people will borrow the pan and I will never get it back,
if more people have this pan, I won't need to make all the rolls for each family bbq,
and what could be easier than using this pan???
Prior to this I'd never had New England style rolls before, but after my first batch, I'll never go back. As others have mentioned, the King Arthur recipe for New England hot dog rolls is perfect for this, and the pan performed flawlessly. After 5 minutes of cooling on the rack, the loaf (connected rolls) flipped right out before I even got the pan turned past 90 degrees.
I did make a couple of procedural modifications to the baking directions:
1. I skipped greasing the sheet pan that went on top, and instead laid parchment over the top of the hot dog pan before I put the baking sheet (sheet pan) on top. It was much easier that way, and as expected, there wasn't even a hint of sticking.
2. I used a 12" cast iron skillet to weigh the sheet pan cover down, but I made sure to preheat the cast iron skillet with my oven so it was also at 375F when it was placed on top of everything. Doing so ensured perfect, even browning after the 18 minute cooking time, without the need for additional "lid off" time to achieve proper doneness. The reason for this is because in most of the descriptions I've seen online, people put a cold (not preheated) weight on top which then acts as a massive heatsink, resulting in a lack of browning that requires additional time after the main bake with the sheet pan removed. Whatever you're using for weight, preheat it along with the oven and save yourself some work!
All in all, while this pan is a bit specialized and requires slightly more work to produce a finished product compared to more conventional breads, it's absolutely worth it, and I can't see myself ever buying hot dog rolls again. The difference in quality is night and day.
I use my soft hot roll recipe (made in the breadmachine on the dough cycle) and roll out half of it to fit this pan. I place slices of cheese (American or pepperjack)in the indentations, and use the weiner-sized smoked sausages on top of the cheese. I roll out the other half of the dough, place it on top, tuck it around the edges, brush with an egg glaze, and bake. Oh.My.Goodness. Just wonderful. After they are cool I cut them apart, wrap each individually in plastic wrap, and refrigerate. They heat wonderfully in the microwave in the mornings for a quick breakfast.
Also use same roll recipe for my version of a hot sandwich: place half the dough in the pan, brush with olive oil, cover with cheeses, thinly sliced smoked ham or deli roast beef, and optionally, grilled onions and bell pepper. Place the other half of the rolled out dough on top. Brush with egg glaze. Bake. Devour.
I have also used a french bread recipe, rolled half the recipe to fit the pan. Brushed with a little pizza sauce, sprinkled with grated mozzarella cheese, and add pepperoni. Roll out the other half of the recipe, place on top, tuck in the edges, brush with egg glaze, bake and voila, pizza in bar form.
And the pan itself - excellent quality. The no-stick coating is so no-stick it's hard to hold on to. It washes like a dream (I wash by hand), it's heavy so it cooks evenly. As time goes by I intend to buy every pan this manufacturer makes.

This pan is very heavy duty, I thought about this purchase as it is quite expensive and I hadn’t really found a good bread recipe to even try in it. The first three bread recipes I tried were major fails. But the third was decent and the fourth was perfect. This pan cleans easy (has a coating) and is very solid. I just hand wash easily after using it, really only to get the oil off the pan, nothing sticks.
So if you want to make some fabulous GF buns that don’t even remotely taste gf buy this cookbook, No-Fail Gluten Free Bread Baking. The hotdog bun recipe in there is great but doesn’t make enough dough so the buns are a bit puny in this pan. I made the white sandwich bread dough and it filled the pan perfectly and they baked very well. The only other change I made was to proof longer and bake at a lower temp (325F vs 375F). I use a steam convection oven (thermador) and any convection oven will need the temp reduced a pinch.
Love the pan, USA pans are very nice! I have a mini cake pan (6 wells) as well and will try making hamburger buns in it.
USA Pan Bakeware he lives up to everything it claims. Seriously, I've tried baking the bread with spray oil and no flour, both oil and flour, neither oil or flour and it seems impossible to ruin the bread. These pans are as great as a convection oven. You will not be sorry. I have the smaller size as well and everything I've baked in these pans comes out beautiful. The difference in treating first with shortening and flour is minor but it does have a slight effect on the exterior. That said, none of it sticks and it all bakes beautifully.
Somebody call Oprah, she likes bread, right?
The pan came with no recipe, no instructions, but I could find that online. The pan is very heavy duty with a good weight.
I did ding it one star because to use it you are supposed to put a sheet pan on top, then a weight on top of that like a brick or heavy iron skillet. I would have preferred it had a pull lid like a USA Pans 13 x 4 x 4 Inch Pullman, Aluminized Steel with Americoat which would have made this pan perfect.
