I've never seen gluten-free New England hot dog buns for sale, so I got this pan to make my own.
I could not have been more pleased with the outcome.
I used the Pillowy Soft Dinner Rolls recipe from the Let Them Eat GF Cake blog, and 4 ounces of dough per roll. Note that a single recipe will only make 8 rolls of this size.

This is my second New England hot dog bun pan, and I love them. The quality of US Pan is the best! I keep one at my sister-in-law's cottage in Maine which we use often to make lobster rolls, and I bought another one for my home since it is difficult to find top split buns where I live. Sure, you can always go to TJs, but once you have freshly baked hot dog buns, you cannot go back to the store bought buns. I am also getting into make my own sausages and looking forward to having freshly baked buns and sausages!

I absolutely love this pan! I am new to the concept of New England Hotdog Buns, but after making them twice, there’s no way I’ll ever go back to conventional store bought hotdog buns! I would totally recommend this pan, it’s well made, nice weight to it.

This is an extremely heave pan with an almost glass-like finish. Nothing has stuck to it and I don't think it will. I've adjusted how I use it for making hotdog buns. While the concept is simple, proof dough in it and then bake covered with an oiled baking sheet (to get flat bun bottoms) flip and continue baking, the results were not what I wanted. First the dough and finished buns were heavy and, to me, dry. This was using a hotdog bun recipe from KAF. Perhaps I over baked them. What I'm using now is a KAF recipe for simple sandwich bread using a tangzhong method to make it softer. After a first proof I make ten equal balls of about 69 grams, let them rest for a few minutes and then for 10 'logs' and place them in the 10 slots of the pan. The second proof is for an hour or so. I preheat to 400 F and reduce to 350 when I place the pan in the oven. The rolls are lighter, tear apart nicely and much softer than the 'constrained' rolls. Make of this what you will. The pan itself is great.

I was worried I got the wrong pan when I got it as the mold for width looks little shy on size. I didn’t use the recipe on the website provided on the pan as I didn’t want a potato roll I wanted an all dense chewy New England roll. When I as looking at the reviews I didn’t pay attention to how many users did they own thing and didn’t follow the instructions on how to make the buns. I was a little worried they wouldn’t turn out like I wanted but after using the dough recipe from my neighbor who is from Martha’s Vineyard and imports his buns from Boston and rolling out the dough into the pan and letting it rise again the dough formed and filled the pan. I didn’t use another pan to keep them square and they were perfect size for lobster rolls and hot dogs. The buns came out of the pan perfectly, sliced and toasted just like legit roll they are the perfect size and width when the dough rises above the pan! This is a durable pan that will last a lifetime. Don’t judge me on my lobster roll. I like mayo and parsley with a few other seasonings on them. I’ve already had the talk about my way....
