The directions say to "stir until the flour is moistened". Well I could have stirred until the cows came home and all the flour never would have been incorporated and I hate to think of how tough all that stirring would have made the muffins.
So I added enough milk to make the batter more of a typical muffin consistency, added the crumb topping and popped them into the oven.
Checked them at 18 minutes and they were still pretty raw. At 23 minutes they were done to perfection.
I let them cool for five minutes in the pan before removing them to finish cooling on a rack.
Wow - I'm impressed! They released so easily and the pan washed up like a dream. I didn't grease the pan or use paper liners ( my paper liners seemed to big for the wells) and I've always used liners.
The pan is pricey for my taste and budget but I think it is worth the splurge if the performance continues to live up to it's first run.
Second update 12/29: This pan is great for making mini pies, cakes, English muffins and more. Just a note though when using this pan to make mini pies I recommend putting in a strip of parchment paper so you can lift the pies out instead of dumping them.
The pans are made, of course, here in the USA (ergo the name) and have a corrugation which makes the pans so sturdy. A coating called Americoat is on all baking surfaces. You can feel the difference when you run your fingers over the pans. They feel as though they have already been sprayed, but this is just the silicone like coating. Because of this coating, one should take care not to use any harsh cleansers or utensils on the pans as it could damage them. This is not to say that the pans are delicate, no they are not. Heavy, sturdy and a delight to use.
My rolls just dump out if I turn the pan over, releasing completely. I do use a little cooking spray just to make sure things go smoothly and not to irritate the great baking PooBa. I just wish I had these muffin pans when our son and then the grand kids were around to have made cupcakes in them. Maybe I'll wait for the Great-grands?? I highly recommend all of the USA line of cookware.
YOU DO NOT NEED PAPER LINERS WITH THIS! A quick spritz of nonstick spray in the well is all you'll need. And do yourself a favor...hit the top of the pan, too. Pour your batter in to 3/4 full and bake till the knife comes clean. I found that it's taking about 8 minutes longer than the recipe calls for. Let the pan cool down about 10 minutes before getting the muffins out. Now you'll know why the top is ribbed.
In one of my failed attempts, when the muffins rose over the top, they spread out. So if you can imagine that I had a cinnamon struesel flat cake with six deep spots, you would be correct. The ribs, however, allowed the overflow to be easy separated. Because I sprayed the top of the pan, too, everything fell away cleanly. (I may have screwed that one up...it was the recipe that came on the back of the cardboard.) I've tried two box mixes and my good muffin recipe. They all rose up tall and perfect! I've not had to change any yields as what ever will give me 12 baby muffins, I get 6 man muffins now.
This is a great pan. It's sturdy, easy to clean and I can see using it for a bunch of other things, too. I feel good that it's made in the USA. It's a bit pricey, but not out of the realm of things and if it lasts 20 years, then a little over $20 is MORE than worth it. Now on to get some more of these USA pans!
