Pullman Pan Cover Instructions:
1.To remove, after pan has cooled enough to handle, hold pan so that the cover’s edge that curls up is facing you. With the palm of your other hand, tap the curled edge so that the cover slides away from you.
2. To replace, slide the cover over the top edge of the pan starting with the edge that curls up. Make sure that the cover is pushed all the way on so that the small indentation on the cover locks into place. This will prevent the cover from moving while baking

I treat the pans & lids like I treat my century old cast iron - with care & consistent maintenance. The pans & lids are well oiled before baking and, after releasing the loaf (while hot) I wipe down the pans & lids with a damp cloth - re-oil, then place back in the hot oven turned off to cool. These little extra steps make all the difference in the performance.
After mixing the batter, I poured it in this pan which I had sprayed with Pam. It states when you receive it, that it doesn't need to be sprayed, but I wanted to be sure my cake came out and didn't stick. I used the lid as well, because I hadn't decided if I wanted my cake loaf to have that raised hump on top, or come out more like a frozen Sara Lee pound cake, which is more or less flat on top. After baking the cake and removing the lid, I realized immediately that I preferred some rise on top and wouldn't use the lid again. I don't know if I tried sliding the lid off too soon after removing it from the oven or what, but it stuck to my cake in spots and pulled little pieces off.
I turned the cake out of the pan with little (if any) sticking. Once cooled, I sliced it and it held together well. The only reason I gave it 4 stars was because it got the cake rather dark; even with cooking it at the same temp in the middle rack of my oven as I always do. This was little confusing because light colored pans don't usually do this, as they absorb heat at a slower rate than dark pans. Either way, I don't regret this purchase, and you won't either. I've purchase a lotta baking pans, and this one's a quality product.
