Pullman Pan Cover Instructions:
1.To remove, after pan has cooled enough to handle, hold pan so that the cover’s edge that curls up is facing you. With the palm of your other hand, tap the curled edge so that the cover slides away from you.
2. To replace, slide the cover over the top edge of the pan starting with the edge that curls up. Make sure that the cover is pushed all the way on so that the small indentation on the cover locks into place. This will prevent the cover from moving while baking

I treat the pans & lids like I treat my century old cast iron - with care & consistent maintenance. The pans & lids are well oiled before baking and, after releasing the loaf (while hot) I wipe down the pans & lids with a damp cloth - re-oil, then place back in the hot oven turned off to cool. These little extra steps make all the difference in the performance.
The pan is well- made; it's neither too light nor too heavy. The non-stick coating isn't dark, and has a slightly slippery, smooth feel. All of my breads have browned nicely and evenly, and the crust doesn't steam in the pan.
Now this pan comes with the lid and I have to say I don't really use it most of the time. The crumb on those loaves is too compact. However I do like having the option if i ever feel like making a pullman loaf. Another thing is you have to experiment a bit with recipes to find the right amount. Simply doubling a recipe for a one pound loaf won't do. (I made that mistake once with one of Peter Reinhart's wheat loaves!) I usually find you have to use anywhere from 1 1/2 to 1 3/4 the recipe to yield the right amount of dough.
The only things wrong with this pan is that the corners tend to rust at the very tips. It's only noticeable when you wash it, otherwise it doesn't affect its performance. The corners also trap a bit of water so you have to move it around once in a while as it dries to get it out.
