Tamagoyaki, for example, should be made with dashi. The ochazuke, which literally has ‘green tea’ (ocha) in the name, is usually made with green tea... you can do it with dashi, instead, but why isn’t green tea mentioned at all in the context of that recipe? There’s no seasoning in the tonkatsu recipe, and the sauce outlined for it also doesn’t look right to me. With all the little oddities in the recipes I’m familiar with, I don’t trust that the ones I don’t already know are correct. I wouldn’t be surprised if google searching for the recipes contained in this book lead you to realize that all of the recipes have odd additions or omissions.
I get that there’s no one right way to make anything, and people have their own takes on different recipes, but I got the impression this was supposed to be more authentic to how these dishes are more typically made. If it was marketed as a unique take on Japanese cuisine, I’d probably be more understanding. As it is, I’ll stick to justonecookbook.com for my forays in Japanese cuisine. 2 stars because I didn’t have to waste any money to discover that this book is useless.
