The handle is a little chunky for my taste, but the knife is a workhorse that will last through years of heavy use with occasional sharpening.
This knife is a good deal.
If you're close to broke, but enjoy cooking, this knife will treat you as well as a knife costing 10x as much.
this knife seems to hold an edge fairly well but I'm not hard on my knives and I know how to use them w/o excess force. I also have this makers 6" boning knife, used mainly to de-bone chicken thighs. Both knives came seriously sharp!, yet use the knife much and you'll need to touch up the edge sooner or later
I bought this chef knife to replace a German made knife that was given to me over 20 years ago, and I only replaced that knife as one of the two rivets used to affix the handle to the blade was working loose. Before buying this knife I was looking at $60-$80 Japanese knives. So glad I bought this one instead, and used the left over money to fund other needs. This is a good chef knife. Sure, you can buy better knives but this one will do anything a more expensive knife will
For any of you who are beginner chefs or at home chefs... do yourself a favor and never buy from stores like Target, Walmart, etc... don't be fooled and get those sets with the knife block if you seriously want to use a knife for cooking.
A safe knife is a well sharpened and honed knife. Dull blades and weak flimsy blades are the worse.
We use this in our commercial kitchens at our restaurant too because no one steals them.
Perfectly balance and more than does the job!
