In my first processing experience, a chuck roast from Vons pre-trimmed of all visible fat and ligament, still yields a good amount of rendered fat upon browning. A sirloin steak being leaner, would render up less fat. And after my first taste of the ground and cooked beef, I thought how "clean" the taste was, and how it lacked the odd mouth-feel of unidentifiable parts (like gristle, tendons, and possibly worse stuff). I'm pretty confident that your ground beef-eating experiences will be much more enjoyable with this product.
I can see pasta making might be easier with this than my other machine, so will be giving that a try as well. Not sure how this will hold up over time vs. heavier metal grinders, but those aren't made like they used to be either. For the price, I recommend this grinder.
I had a trimmed prime brisket to grind. I cut my brisket into very thin strips (no larger than 1"x1") and fed them into the grinder. This was a fairly awkward process being that you need a hand to turn the wheel, a hand to feed the grinder and then a hand for the 'pestle' to guide the meat into the parts that do the grinding. If you aren't doing the last part the meat tends to stay out of harm's way and flop around on top of the plastic screw (instead of being fed into the grinder and through the plate) that you are turning via the handle.
The first strip I got in there correctly was really woefully ground. Like it looked nothing like the ground beef you get from a grocery store. It looked like it was chewed up and spit out, not at all cleanly ground. The next strip jammed the plate resulting in the 'ground' meat being sent back the other way. I cleared the jam with a knife. Next strip, same problem. Jammed. Very shortly thereafter the machine broke. There is a black plastic collar that screws on to the lip of the clear plastic housing, ideally securing the grinding assembly and plate. Well the lip broke off. Inspecting everything further I found that the plastic 'screw' was rubbing against either the metal of the grinding assembly or the metal part of the handle that turns it and had grooves being shaved into it. So my 'ground meat' was contaminated with two different kinds of plastic.
Based on my experience and the unit's design and materials, I do not see how this thing could possibly serve to grind beef. I requested a refund and returned the broken unit.
