-Vanilla extract creates a natural flavor from pure vanilla beans.

-In the United States, for vanilla extract to be called pure, the U.S. Food and Drug Administration requires the solution to contain at least 35% alcohol and 100 g of vanilla beans per liter (13.35 oz per gallon). We use 300 g of vanilla beans per liter.

-The process of creating flavor extracts involves using a liquid base to extract aromatic oils from herbs, spices, nuts or fruits. It is similar to brewing a cup of coffee, where hot water flows through the ground beans to produce a liquid extract.

-Vanilla extract creates a natural flavor from pure vanilla beans.

Most vanilla beans available today are from Madagascar, Mexico and Tahiti. As with wine, chocolate and coffee, vanilla from each country has its own distinctive flavor profile and characteristics, owing to the different climates, soils, curing methods and vanilla species.

Processing vanilla

1) green vanilla harvest, the plant deteriorates quickly after harvesting and has no smell,

2) inhibition of the vanilla development process, through the process of drying in the sun or brewing in boiling water,

3) (Sweating) storing the pods for 7-10 days at a high temperature of 45-65 degrees C. Then the enzymes convert the compounds found in vanilla into vanillin, thanks to which it obtains a vanilla taste and smell,

4)(Drying) blocks the rotting process and preserves the aroma. The vanilla is dried in the sun until it reaches a maximum humidity of 25-30%. This process sometimes takes several months, even up to 6 months.

5)(Grading) After drying, the vanilla is sorted and packed.

This is not your typical vanilla extract. Strong enough, without being overboard, but so good you'll find yourself tasting it for no reason. Very smooth!
