Yesterday, The New York Times reported that the world's #1 restaurant Noma planned to shift to a vegetarian menu for half the year.
While many seemed surprised or even shocked, we weren't. Less than a year ago, celebrated chef Joel Robuchon had declared that vegetarianism is the cuisine of the coming decade -- and we've seen scores of other leading chefs moving in that direction, through reducing meat on their menus (e.g., Dan Barber, Alain Ducasse) and/or offering vegetarian and even vegan tasting menus (e.g., Daniel Boulud, Daniel Humm, Thomas Keller, Patrick O'Connell).
There are countless reasons that professional chefs and home cooks alike will want to learn more about cooking meatless meals. That said it is a very good guide to flavor matches that can be used as a reference to create recipes or "cook live". People who have little kitchen experience will find it confusing and daunting; competent and advanced home cooks and restaurant workers will find it very handy in a pinch or just to plan meals and shopping ahead. The companion book "The Flavor Bible" was better because it mentioned a lot of wine affinities and this has fewer. Best would be a combination of the two in one volume but I'll wait for the Seafood edition and be happy if there is one.
If you already have The Flavor Bible, I'd say you don't really *have* to upgrade to this book. But given how often I use it, I'm glad I did.

The photo's are beautiful and the presentation is more like a tabletop book than a cookbook.
This book is the follow up to The Flavor Bible. While the original covers all kinds of foods, including meat, this book focuses on vegetarian foods. It is important to note this book is NOT vegan, as it includes eggs, dairy products and honey. However, even though the book omits meat, it is not smaller than its predecessor, as it includes additional foods not found in the original.
If you are a vegetarian, and love to create food, I'd highly recommend this book. If you are an omnivore, I'd recommend buying both! There is enough new material in this book to make it well worth purchasing in addition to the original.
