Under 15 Minutes - Quick & Easy
Ingredients: 2 thick slices red bell pepper, 2 eggs, salt & pepper to taste, 2 tablespoons olive oil
Directions: Heat the olive oil in a skillet, Place the bell pepper slices in the pan, then crack open the eggs and drop them in the center of each slice, Gently press the slice into the oil to seal the edges, then fry the egg as you normally would. Serve right away

The chapters were called "Easy and Quick Recipes for Busy Moms," "Quick and Easy Recipes for Romantic Meals," "Quick and Easy Recipes that Even Kids Can Make," and "Easy and Quick Recipes for Parties." The only one of these that really makes much sense is the last one, for parties. Other than that, I can't see why any of these recipes fall into those categories. However, within these chapters, the descriptions of the recipes really stick with the category that the recipe has been placed in. Even so, the categories seem arbitrary. This is a very small consideration, however. It just makes it more difficult to figure out where a recipe is, so I've bookmarked the index of recipes.
The first recipe we made from this book was called "Tomato and Basil Sauce Pasta," despite the fact that basil was more of a garnish. (The recipe called for 4 basil leaves for a 2-person recipe. That is not enough basil for one person, in my opinion!) This recipe was very simple, and very delicious. (Spoiler alert -- I added extra basil at the end. I couldn't help it. Probably about 12 leaves.) One problem with adding 4 basil leaves is that basil leaves are a variety of sizes. I would have preferred to have a measurement, such as 1/4 cup or 2 tablespoons. Also, this recipe called for a bay leaf. I couldn't find any place where you could possibly have involved a bay leaf in the cooking, so I just skipped it. But I will honestly say, this was a wonderful recipe. I don't think I'll ever buy a can of tomato sauce for pasta again, knowing that I can make such a delicious recipe so quickly! The sauce cooks as quickly as the pasta, and doesn't require much work or chopping.
The second recipe we made was "Crunchy Zucchini Saute." It was amazing. Words completely fail me -- in fact, just thinking about this recipe right now makes me want to go cook it, and eat it, and I absolutely can't think of how to describe it. There is one caveat: I don't believe this would be a full meal for 2 people, even though it says it serves 2-4. It's more of a side dish for 2-4. If you wanted a full meal for 2 people, I believe you would need to serve it on a bed of rice or pasta. It would be really wonderful with either. I really loved this recipe because it was so fast, so easy, and combined ingredients that it literally never would have occurred to me to serve together.
I'm really excited to try more recipes from this book. I have all of the ingredients for Tempeh Rueben Sandwiches, and I can't wait to get more mushrrooms to try the Spiced Sauteed Mushrooms.
All in all, I am very pleased with this book. The first 2 recipes I've made will definitely be made again in our house, and I look forward to trying more! I received this product for free in exchange for my honest and unbiased review.
A vegetarian or vegan do not eat meat, fish, poultry, eggs or dairy. They also are known to eat their foods raw. Being a vegetarian is not only to lose or maintain weight. It is a lifestyle and author Jonathan Vine does a nice job explaining what a vegetarian is and why people become vegan. There are many health benefits of going vegan, lower risk for heart disease, diabetes, obesity and many other reasons.
A vegetarian has to be careful to see that they are getting enough nutrients, and of course fruits and vegetables have proteins, fiber, minerals and lots of antioxidants. To be a successful vegan, you must make sure that you get the right amount of proteins, calcium, vitamin D, Iron and vitamin B-12. Other benefits include detoxing your body and mind, weight control; there is a reduced amount of sugar and fat when you eat vegan. Strong bones, relief from allergies, you get a lot more energy and of course you are being a part of not killing animals for food.
As I was going through the recipes I did find a lot of appealing ones that I will be trying, there are recipes for breakfast such as the Spiced Breakfast Pudding, which has barley, bulgar, rolled oats, it uses almond milk for the milk substitute, which I like along with soy milk. The next section, after recipes for busy moms, is quick and easy recipes for romantic meals. Pesto Omelet, tomato and basil sauce pasta, and the Spinach and Strawberry Balsamic Salad looks sounds very appealing. There is a section of recipes that kids can make, fast and easy recipes for parties,
Excellent pictures and easy directions make this cookbook perfect. Something for everyone to eat. I like that, there are recipes in this cookbook that I will be trying, hubby is a meat and potatoes kind of guy but after his bout with cancer he is agreeable to eat more fruits and veggies into his diet. More so now than he ever did before. So I will be making some of these recipes for us.

Having already tried another cookbook from this author, I was confident that this one would not disappoint. I particularly loved the categories, which were unique and helpful, including recipes for busy mums, romantic meals, make with the kids and for parties, each of which are written in a different colour text to make it especially accessible.
There is some very useful information and support for adhering to the vegetarian lifestyle and one of the most impressive features of this book, was that the pictures were so appealing, that even my toddler was saying yummy dinner in anticipation of my creation!!
