I also use for slicing meats, slicing veggies, and pretty much takes the place of a chef's knife for me.
I work on a boat and i also have one of these as an emergency rope knife (for slicing through rope in an emergency) and have used many times when ur boat has run over some floating line or old fish nets. very nice knife. victorinox do make excellent products.
I also read that there is a little flex to the blade, and there is. This hasn't reduced its effectiveness at cutting. However, when I cooked a more delicate bread in a dutch oven it came out darker than I prefer, the flex of this knife made it possible to shave off some thin strips from the top and bottom with ease and safety. I find I have tremendous control with my cutting using this knife. I wouldn't have been able to do this with my old bread knife.
The only down side of the length is the leverage is slightly reduced nearer the top 2-3 " of the knife for me. Meaning that on a thicker crust, I had to do some more concentrated sawing with pressure to get though the bottom crust near the top of the knife. I would have had to do that with any knife.
The clean up is a snap and it's ready to use at an instant.
This is a terrific knife and a good value. I'm happy to have it!
After a chef's knife I'd consider it the next knife on your shopping list. I should mention Cook's Illustrated highly regards the Victorinox knives with the Fibrox handle. We have several Victorinox/Forschner knives in our knife block and we reach for them more often than more expensive forged knives. The 12" slicer is another knife I feel every kitchen should have.
I'd been wanting this knife for a while, made better with Prime Day price. (This knife had been America's Test Kitchen best buy bread knife for a while until the recently ATK highly recommended the lower priced Mercer Culinary Millennia 10-Inch Wide Bread Knife took its place. Said to be best for crusty bread due to fewer number of serrations, 29 serrated teeth as opposed to 41 on the FibroxWavy.) That's okay, I'm happy with the all purpose FibroxWavy.
