You can use them for paring knives between steak dinners, too. With the wavy edge, they don't get dull.
I just got a similar one last week and have used it daily. I can't believe how sharp it is. (I believe it more today since I cut my finger with it last night.) It does a wonderful job on meat and veggies. I've been telling everyone how wonderful it is. I think you get used to your old knives....I even thought I kept them sharpened....and don't realize what you are working with. If you are even considering a new knife, make it one of these. I bet you won't regret it.
I bought this in early May and I'm still surprised how useful this is in the kitchen. You can cut a tomato so thin that you can read your medical policy through the slices to see if you're covered if you accidentally self-amputate. If you're clumsy with a knife you might have to take off one shoe and stick up your big toe and both hands to indicate the number ten.
Oddly, the one thing I don't use it for is a steak knife, although it would excel at that task. Also, I only have one of these knives and some people find it rude if you are eating steak while they are spooning up beans & franks.
But if anyone tries to brain me with a baguette I can slice it down to bagel size in a jiffy.
This is an excellent and useful knife.
Update Sep 24, 2012 This is also the best tool for docking (slashing) a loaf of bread before it goes into the oven. It is easier to use than a razor blade.
