The R H Forschner by Victorinox Paring Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

For many of my cooking tasks, I find I need a sort of "in between" knife. I love the Victorinox chef's knife, but often the task at hand doesn't require a knife that big. I love the paring knives, too, but often am chopping or slicing, so the paring knife is not quite enough. The 4-inch utility knife is my Goldilocks knife -- just right!

The first time I used it, I was chopping sweet bell peppers, something that's often frustrating; if the skins are just a little bit tough, many knives don't deal with them well. I end up having to rearrange the slices I've cut with the inside facing up to chop through them readily, a hassle and a time-waster. Not so with this knife! Its super-sharp blade sliced through cleanly and quickly with almost no effort. It was also a handy size for cleaning and cutting up the peppers to prepare them for chopping. From there, I moved on to the onions, then to the finely chopped garlic (I was making chili), and it performed equally well with all. The handle is a little small and light, but fits comfortably in my hand, and in combination with the thin blade, it makes the knife very maneuverable.

At first I wasn't sure I liked the white color, but now I appreciate it because it makes the knife stand out among all the black handles in my knife block, which is just what I want, since it's become the first one I reach for almost every time. For the money, you really can't beat this knife. Get it along with the Victorinox chef's knife and you just might find that instead of a drawer full of so-so knives, you can become a 2-knife cook. I had been using a Cutco paring knife--the kind that "never needs sharpening." I decided to change to this knife, which was recommended by Lynn Rosetto Kasper (Splendid Table). What a difference! Cutting is fun, not work, now. An amazingly reasonable price too.

This will be short, Vitorinox knives are sharp, this came as expected. The 4" knife in my opinion is pretty much the shortest one should start out with. Quality is great for the price, this is an inexpensive knife but the blade quality is a higher. The handle is where some may have an issue, it takes a bit of use to, maybe it's the contour and small size of it. I have a similar sized Kiwi brand knife but with wooden handle and that feels more natural to me. Same handle length, same thickness, the wood one has no contour, just straight, like I said, maybe I have been used to that wooden handle. I also think while the white handle is nice change from others, I wonder if staining may be an issue.

That's all I have, I will update if I have issues with the blade or the handle in the future.

Title says it all, these knives are better than some ive payed 4 times as much for,Its a good all around utility knife, When my next check comes in I am totally gonna buy one of their chef knives! It holds a really sharp edge, and on top of that, it holds it for a VERY long time, ive had this for months now, using it every day, and its still just as sharp as ever! One piece of advice, for using ANY knife, never use your knife over glass, tile, or ceramic, only on plastic or wood, ANY knife will lose its edge fast if used on glass, tile, ceramic, or other similarly hard material... wood and plastic only!!! ^_^

I bought three Victorinox knives based on a recommendation from "Cooks Illustrated" magazine. I am so pleased! I got the 3" and 4" utility knives plus the chefs knife. All three are the best of their kind I have ever used, and I have always considered myself a bit of a knife snob. The polypropylene handles are very comfortable and non-slip, and the blades are just right. They are really sharp and they stay sharp. The chefs knife is perfectly balanced and such a pleasure to use. And the best part of all, they are so affordable. You deserve these knives!

Another gift for my mother, per her request. Sadly we could not get this in white (handle) to match her chefs knife. This knife gets consistant great reveiws by leading cooking magazines as the best non-forged parer available in this price bracket. Seems to be a good quality knife with just enough but not too much flex in the blade.

Good sharp knife. This is my first Victorinox knife. Compared to all our other kitchen knives in this size range, this one keeps an edge tremendously longer. It was perfect for cutting up our garden tomatoes, and is so superior to our other knives, it's the only one I'll use for that purpose. It slices right through tomato skins with ease, and keeps doing so. I purchased this with a Chef's Choice 463 manual sharpener, so I can put the super sharp edge back on it quickly and easily. Fact is, I bought this knife as an afterthought, because while researching sharpeners I learned that the Victorinox knives are supposed to be a very good value, so I thought I'd try one out. I'm SO glad I did. Turns out I seldom use the sharpener, because this little knife keeps its edge so long.
