The Victorinox Magnetic knife guard is a, so far, lived up to my expectations, and as a career chef understand that if you do not thoroughly dry your high carbon steel knife prior to placing it in a knife guard, especially one that will press flush against the blade, then rust will form. Even if you were to wash your high carbon steel knife and (god forbid) not dry it, letting the water lay on the blade, say overnight, rust will form. If you do not care for the knife, even brand new, rust will form. So if you choose to spend your hard earned money on a fairly expensive carbon steel knife you need to learn how best to care for it. Also understand that yes, a nice shiny knife with no scratch marks on the "flat" of the blade is a beautiful thing. But you buy a quality knife for it to be USED, not framed and hung on the wall.
I for one like these mag guards, but only for certain knives. I have them on my Shun utility, my Henkel and Trident parers, my Global santoku and 8' cook knife. I do not have them on my Shun Premier 10" Chef or my 12" Mercer Slicer. My Henkel boning and filet knife also do not have them because a magnet needs a fair amount of steel to "stick" to to be truly secure and they do not. I also do not have one on either my sushi knife or my Global Deba because of the blade itself and the mag guard doesn't quite fit correctly.Read more ›
I have to say though that they don't come off too easily. So elderly people may have difficulty here. On the other hand, children will be slowed down for a moment as well which could be a bonus.
Actually, even if we hung these on a rack, slippery wet fingers and the like can cause problems grabbing them, so I'd still protect the edge (and fingers) with one of these. Pretty much required if you have a cleaver.
