Victorinox, makers of the Original Swiss Army Knife, has been crafting fine cutlery since the later 1800's. Oysters knives are unique in the world of cutlery. To shuck an oyster a chef is presented with the task of "splitting a rock" first then proceeding to properly process the most tender of meats hidden within. In this endeavor no standard knife will do. The Victorinox Boston Oyster Knife features a long, moderately narrow, high carbon steel blade with a pear shaped, Red SuperGrip Handle. Boston style is versatile and very effective at opening just about any type of size of oyster with any chose opening method. The forward bulge in the handle serves as a stabilizing thumb rest while the more narrow body behind it enhances a good grip for the rest of the fingers. The rear of the handle is bulged again for good support in the base of the palm. The 4-inch blade is long, narrow and strong with rather dull edges. The top and bottom of the forward section of the blade is gently convex. It gradually narrows and terminates in a flat, rounded tip.

I shuck 300 to 800 oysters a week. This knife does the trick. The New Haven tip cracks open the hinge and goes right into the muscle. Quick turn and the bottom muscle is cut. Role over the oyster and ready to serve. I do have to do a quick sharpening every other week. The handle is tought, sanitary and does not dig into the palm of your hand after shucking several hundred oysters.

I am a professional working Shucker and have been for over 20 years. I've recommended this knife to many people who ask (for rear hinge oyster shucking only). I've shucked over 1900 oysters in a day on this knife - it has never let me down. Similar to the Dexter Russel, however the non-slip grip makes the huge difference when shucking large quantities of oysters when you hands are wet. Once adept the long blade allows you to pop the hinge and cut the adductor muscle in one sweep even on the largest of oysters such as Malpeque. I am currently testing out other knives with shorter blades for different shucking techniques... but the feel is essentially the same. I replied to another review of this knife here on Amazon. If you are having problems with breaking oyster knives you are torquing the blade too much. For rear hinge shucking simply wedge the knife in good and wiggle it, like you are turning a door knob. You want to feel the middle of the blade (not the edge) that is where the power. It will pop open with patience and technique. *** never use your weight leaning into the oyster to get power.*** Less force = less broken shell. Also less chance of cutting your hand or butchering the oyster itself.

I work at an seafood place/oyster bar that primarily serves oysters on the half shell and this blade has proven perfect for getting in the hinge quickly and cleanly. This is almost great beginner knife, the only thing that stops it from being all around perfect is also its biggest strength: the hooked tip. The hooked tip is awesome for serving on the half shell for most oysters, but isn't quite as versatile as Boston or Galvenston style knifes for getting into the really big oysters, clams, etc. If it's your first knife or your only knife I recommend the Boston style of the same brand, but that doesn't stop me from loving this knife!

Overall I really like this knife. Just did a 100ct of James River Oysters (which I think are Med to Large) today for a party and found it much better than my previous knife. Someone recommended the curved tip "New Haven" style who had shucked at an oyster bar and it really worked well for these oysters. Granted, it think these are easier than others I have done in the past. Benefits of this knife include-non-slip handle, good handle size for my Med size hands, VERY solid stiff blade, curved tip that was thin enough to wiggle into the joint. Nice curve also helped cut the abductor easily. Broad enough turn the meat after cutting. Granted only one day of use so we will see how it holds up, but it still looks brand new and more importly still feels solid. Price was a bit high, but if it lasts, well worth it!

I've owned a few oyster knives now, and this is my favorite. i like that it's not as wide as some of the other similar ones, so it's easier to slip in the hinge and then go in and cut the top abductor muscle of the oyster. nice sturdy feeling knife with a comfortable handle. i recommend.

I bought this knife for shucking oysters that are farm raised and have inherently thin shells. This knife does exactly what it is supposed to do and works well entering an oyster from the non-hinge side of the shell. I would recommend this product to anyone, pros and non alike.

I shuck oysters on a daily basis for work, so the red devil is always in my back pocket. I love this knife, and especially the grip. I did have it break on me twice, but I simply re-ground the tip to the way I like it. I'd been used to using shorter Dexter shuckers before so I believe that's why I snapped it. Regardless it's at the perfect length now and I cant complain. Also good for side shucking.

This "New Haven" model has been my go-to knife for years. It is both sturdy; has a great grip, even while wet; and its bent blade provides that tiny bit of leverage required to remove the top valve of even the most stubborn oyster and easily sheer that adductor muscle. This is the third or fourth knife that I have had, since they all manage to "disappear" among my friends -- even with that bright orange handle. It is as useful while shucking in hand or down-shucking with the use of a towel; and is superior, in my opinion, to the Dexter-Russell (S120), which is quite popular.

As an added benefit, I also use the New Haven to pry off sea urchins from rocky surfaces, while diving, having drilled a hole through the handle and attached a lanyard.

I generally stay away from those oyster knives that are entirely metal -- too slick; those with guards; it usually ensures that the poor . . . shucker is using far too much force for his or her appetizer. It is just necessary to find that "sweet spot" in the hinge -- and it will pop free with little effort . . .
