Top customer reviews
I ordered this knife because my friend has one she's had for 10 years. She recently came to stay in Miami and brought it with her. I was amazed at how sharp it was after 20 years, no rust either. So I ordered mine. The handle is sturdy but light weight. For me that might be a good thing. I rather be able to maneuver the knife with less weight than a weighted one. The handle is also a bit on the narrow side but again, for me that is a good thing. It is very sharp. I watched the onion video and sliced a yellow onion with the Chef Tools knife I have at home (over 4 years, sharpen myself) and then I used the Victorinox. I could definitely feel the difference. I know if will have to be careful with the knife because of the difference in weight.
The blade seems a bit thin so I don't know if it might break. I might have preferred a blade that was just a tiny bit wider. I will update after a couple of months of using it.
Criteria for Purchase:
1. Tired of sharpening my knifes, lol. 2. Used one that was 10 years and was still very sharp and no rust. 3. Excellent price 4. Good customer service reviews.
be careful I cut myself already. This is really a sharp knife.
The biggest down side is that the polypropylene handle gets very slippery when working with the knife - even if cutting something that doesn't have much juice, like an apple. It worries me that I'll slip and cut myself. I am constantly pausing to wipe down the handle while cutting something. I don't think I'll buy any more knives with this type of handle.
JAN 2015 UPDATE:
I am removing a star from my review. The blade is still very sharp but the very tip has bent a bit - this occurred just when cutting an apple. (The knife didn't even get stuck! The blade was straight beforehand, then when the apple was sliced, the bend was there.) In addition, I am constantly worried that the blade is going to snap somewhere - or maybe even come free from the handle, though I think snapping is more likely. I do not use it for heavy duty cutting. It is a paring knife and used primarily for cutting small fruit. Cutting apples is the most "harsh" task the knife faces! I treat my knives very well and am not rough with them so I know it's not a user/abuse caused problem. I may have to retire this little knife as I am in constant fear of this blade snapping and it has developed a very slight "wobble".
My 10 year old Wusthof paring knife, which was $6 at a housewares store in NYC, is still perfect. I think I need to seek out another of those as a replacement and forget the Victorinox.
MAR 2016 UPDATE:
I have since donated this knife and replaced it with a Victorinox paring knife with a Fibrox handle. So far it has been working out well - handle does not get slippery like the polypropylene did.
My experience with the paring knife has been very favorable. Although it's small and rather nondescript in appearance, I've used it to remove the silverskin from both beef and pork tenderloins far more efficiently than with any other knife I own, including a forged blade from a manufacturer with an excellent reputation and a high price. The stamped blade is easy to maneuver, and seems exceptionally sharp.
While the small handle might be a problem for people with large hands, the high quality of this knife, combined with its low price, make it worth trying for just about every home cook. Beyond that, if it's damaged, unlike the high priced paring knives that it competes with, it can be replaced without any feelings of angst. This is an exceptionally good knife at a remarkably low price.
The thing that makes this knife great is its size. A paring knife should not be too big. I have fairly large hands, and most knives I've used have a blade that extends well beyond any fruit I've cut. This knife is just right for confident control while peeling or slicing fruits.
