CLEANING
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.

SHARPENING
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.

I have bought this knife in mid-Spring 2020 and I do not regret it at all! The knife is one of the sharpest knives I have ever seen - put my other expensive knives to shame. The price is great, (buy more than 1- you will thank me for this!!) the curved-shape is perfect for cutting fish, steak, chicken, pork, bone out of pork (pork shoulders) and beef... it does an amazing job. I even use it for cutting fruits, melons, .... well everything really. I love it. The one I chose was a bit firm with the blade - I might get the more flexible one, if you have seen those chef videos then I suggest the flexible one. Else the firm does not bend as much. However, I love it and I think it is amazing and allows you to cut in angles you didn't know was possible especially getting more meat off a bone (Pork blade) or how much fat/membrane you can take off without cutting off the real meat. If you think about it - it allows you to cook better and saves you from throwing away meat that you can use/eat. Now one of the best features not mentioned much is the handle... it is super great ... what a grip. I have HUGE hands so most knives bother me or do not provide a good grip or can become slippery due to prepping/grease/water. Now if you cutting off pork fat or cutting fish or have running water - in most cases the grip is important and this has the best grip I have ever seen. Now my wife has small hands and she loves this too... so it caters to both sizes. I can tell you that this knife is one that I would give as a gift and I would expect a THANK YOU card because it is just that good! PS - my wife found there is a BladeSafe from Victorinox - it covers the blade and allows you to carry it (if traveling) or if you got little ones -it does a good job covering the blade and allows you to throw it in a bag/purse/cooler and not worry about getting cut. Love it. Just wanted to let you know.

Victorinox 6-Inch Flex Boning Knife with Fibrox Handle
Fantastic knife! Bought this knife to use in order to break down primals into finished products. Out of the box the knife has a very decent edge, and it was easily sharpened when that eventually came. Since the blade is flexible it is hard to recommend as a person's first knife. Because while it will bend in the same manner consistently, becoming use to that bending can take a decent period of time to properly adjust to. That bend comes in very handy when boning out product however, and can help get more og that product off the bone while protecting the edge better than a stiffer blade would.
After a couple of months of usage it became evident that while this knife works fantastic when during deboning, or making smaller slicing cuts: using it for more mundane tasks, such as cutting produce can become dicey. Because of the blades size and length it was not great at cutting large whole beef primals: whole boneless strip loins, or whole ribeye loins as some examples. The flexibility and size of the blade made it hard to keep the blade true during each steak cut, and often the steaks were uneven: found it better to use a breaker knife in that situation. The knife was a gem when taking silver skin off: connective tissue found between some muscles, it is very easy to get the blade under the silver skin, and by angling the blade away and up towards the silver skin it was possible to pulling the blade right along the silver skin: removing it without losing any meet. The knife gives a lot of feedback, and it is easy to follow the bone around pealing out every last bit of meet. Found boning out pork especially rewarding with the knife.
Found the edge surprisingly resilient, and that it could take a decent amount abuse before needing to be steeled. Sharpening was easy using a standard wet stone, and it took months of daily usage before it dulled to the point it needed to be sharpened. Handle is made from solid black plastic that has just enough texture to not become slippery, but smooth enough to keep cleaning easy. Cleaning was very easy: as this knife lacks any features, or decor that tend to make cleaning difficult. The packing was a disappointment: it came in a huge plastic clam shell that looks as if it were made for one of the larger breaking knives. It comes with no extras such as a blade cover or holder.
If you are looking for a great knife to bone out meat this is a great knife for you: if you are looking to by one knife for all your cutting needs you really should look elsewhere as this knife is a little too specialized for your needs. For the price you can't find a more functional knife for general boning out usage.

I love this knife, I spent a lot of time trying to figure out which knife to purchase for cutting meat, and so so many butchers recommended this and even sell this on their own personal websites. I know that people will sell the more expensive wooden handle version because it looks nicer, but the plastic one grips super well and I have zero issues of slipping. I also do not need to take care of the wood and make sure that it doesn’t go bad. Victorinox makes amazing knives for the price. I didn’t realize that it was the same company who made the Swiss Army knife. If you’re on the edge, trying to decide which knife to purchase for general butchering and you want a knife that’s going to last you a lifetime if it’s only used in your home then this is the knife to get. The blade comes razor sharp and was super easy to put another edge on. The medium flexibility is perfect, and I will be also looking at getting a breaking knife from Victorinox

Have you ever tried trimming a whole brisket or any kind of primal with a santoku knife? Yeah.. I wouldn't recommend it. That's what I've been doing. Until now, when I discovered there was actually a knife made for this specific purpose!

Enter: Victorinox boning knife.

Let me say this. Right out of the box, this knife is sharp. Like, really sharp. I actually almost unintentionally stabbed myself taking it out of the box because I didn't realize the pointed end of it had pierced right through the thin plastic protector that it ships in (be careful of this as well, you want to test it on a cutting board only!)

I wasted no time putting this knife to work. I know it's an overused cliché, but this knife literally went through chicken breast like a hot knife through butter. I pretty much just moved the knife towards the chicken with almost no force at all and it sliced right through it. Have you ever tried trimming a whole brisket or any kind of primal with a santoku knife? Yeah.. I wouldn't recommend it. That's what I've been doing. Until now, when I discovered there was actually a knife made for this specific purpose!

Enter: Victorinox boning knife.

Let me say this. Right out of the box, this knife is sharp. Like, really sharp. I actually almost unintentionally stabbed myself taking it out of the box because I didn't realize the pointed end of it had pierced right through the thin plastic protector that it ships in (be careful of this as well, you want to test it on a cutting board only!)

I wasted no time putting this knife to work. I know it's an overused cliché, but this knife literally went through chicken breast like a hot knife through butter.
