A Good Flour I Made A Mistake With

This retains the scent of coconut in the baking, and that put me off trying to use it. Then I discovered it makes a palatable, serviceable biscuit. Not the fluffy, soda raised white wheat flour blended with good lard. But, it works.
This stuff absorbs tons of liquid. 1/4 a cup will handle 1/2 a cup liquid to create a thick paste. The final item is extremely dry. Most use tons of fat and egg to counter this property. That rather defeats the term healthy.
First, mix the coconut flour with twice the volume of liquid. The total needs to be the amount required in volume for your wheat flour. Mix 1 T (9g) pysillium husk and 1 T vital wheat gluten together, then with 100g of water. Let both sit to hydrate about five minutes. Mix together all the rest of your ingredients- the coconut flour is your flour, the psyillium is your egg. Use 1/3 to 1/2 a cup of wheat bran, and mix everything to get a stiff dough. Spend 5-10 minutes and knead it really well, to develop the gluten. You need to develop the gluten for a nice texture. Bake at 325°F until done, and that depends on the size of your rolls or loaf. It could be 10 minutes to an hour and a half.
You can add salt, sugar, spice. Anything you like to hide the coconut taste
It is a good flour by itself, however in concert with a couple of other items, it makes wonderful cakes, breads and muffins. I purchase this item on Subscribe & Save, so it reminds me each month to reorder it if I need it. Right now I have a small stockpile of it :). One thing you do need to know about this item is that it is a thirsty flour. I saw that another person recommended adding equal amounts of Coconut Flour and water to replace traditional wheat flour. In my case, I up the ante and use Fat free Greek Yogurt instead of water, upping the flavor and the protein in my baked goods. As a 'trim and healthy' advocate I believe that's important.
Also, when using Coconut flour or a mix with it in it, you need to let it sit for a few minutes before baking as it soaks up the moisture. Then adjust it a bit by adding a bit of fat free yogurt (unless you are dairy-free) or other moisture adding item that won't affect your flavor. And for those that are Anti-Coconut (like my hubby), there is no discernible coconut odor or flavor in my baked goods unless I add coconut oil, coconut flakes or coconut flavoring. Believe me, I am pretty sensitive to odors. I love coconut, personally, but if I want coconut flavor or odor in something I'm making, it won't be from this flour.
This is the most easily accessible Coconut flour I've found with a reasonable price, and it is also on Subscribe & Save. As a Prime member I actively look for items that ship Prime, and/or are on Subscribe & Save (and no, I don't get any extra bonus points with Amazon for saying that, it is simply the truth). I live way out in the country, and Prime and S&S keep me well supplied with the things I need.
Viva Labs Coconut Flour is an important part of my healthier lifestyle as I do a lot of gluten free baking - and I love this product! In all the times I've ordered it over the past year I have never had a problem with it. Consistent and even quality every time.
Basically, you cannot go wrong with this coconut flour, and it is a 10/10 for every use you can come up with!
I recommend it.
