We start with unpasteurized, fresh Italian almonds. You may already know that most almonds commercially available in the US are not truely "raw," even if the label says they are, due to USDA pasteurization legislation. Our "really raw" almonds are soaked for 12 hours, a process called sprouting, to remove the natural enzyme inhibitors in the almonds, and to activate the life-force. Sprouting nuts makes for easier digestion and optimal nutrient absorption. The Almonds are then dehydrated at 115°F to prevent fermentation. The sprouted almonds are then stone-ground with a touch of Himalayan sea salt in small batches, ensuring the finest flavor and preservation of all the delicate nutrients.
