1) The “cheesecake” says one can of coconut nut milk with two Tbsp gelatin in all the recipes, that turned out to be a ridiculously small amount of filling. Thin rubber. There is more crust than filling.
2) the steak and mushroom skillet calls for 1 cup of tarragon, it was horrible! Needs less than 1/4 cup.
3) the bouillabaisse with LEEKS, MUSHROOMS, and saffron... has no leeks or mushrooms in the recipe.
4) She says heat it up when you should boil it.
It’s a cookbook that should be be able to follow to a T, but you can’t. Too many untested recipes.
5 recipes tried, 3 recipes failed.
Now with this cookbook, I can fix food that isn't boring, & don't have to spend time and money to find egg replacements. I tried Xanthan gum recently and had another attack. Apparently, it's often made from dairy or soy, another added food to avoid.
If there is another paleo cookbook out there that has no wheat, dairy or eggs, I'd like to know, by the way.
Adding comment after cooking based on the book. I am not using the exact recipes today, but the inspiration is remarkable! Eating mushrooms sautéed in avocado oil, mashed cauliflower, waiting for some natural pork and cabbage to come out of the oven. Watching several of Terry Wahls talks helps reinforce the reasons to make the total switch to this kind of eating. I am so grateful!

While I didn't completely stick to eliminating sugar, gluten, or dairy. The increase in my veggie intake and the decrease of my carb and sugar intake really helped my energy levels. I usually go through energy and crash cycles throughout the day and those mostly subsided. I was pretty good about sticking to it for 3-4 months. Then I started falling off the diet when my cousin came into town a few months ago and convenience became more appealing. Good habits are so hard to build but so easy to break! I've learned how important my diet is in how active my disease is and I'm glad I have this cookbook to help get me back on track. I recommend this and Dr. Wahls' other book to all of my friends with chronic illness. Feed your mitochondria!
